Rice Noodle Soup - Quintessence of Vietnamese cuisine

Hello, friends on Hive blog! Today, I'd like to invite you to join me for breakfast haha. Do you know Vietnamese rice noodle dishes? This food really famous and renowned worldwide. Typically, vendors wake up as early as 4 am to simmer the bones and prepare other ingredients to be ready for sale by 6 am. Due to the complexity of this rice noodle dish, it requires the whole family to work together as one person alone cannot handle cooking and serving all customers.

Recently, I stumbled upon a charming breakfast spot located near the center of Soc Son town. This noodle shop is truly an ideal destination for those who have a passion for traditional Vietnamese cuisine because this food is so delicious. Very diverse, it can be said that all types of vermicelli are sold here.

Consequently, I made sure to save the restaurant owner's phone number so that I can easily order food to be delivered to my house whenever hunger strikes.

From bun, pho, vermicelli, porridge, to various types of meats and supplementary ingredients, everything is prepared meticulously and deliciously. Particularly, the breakfast options like chicken heart with eggs, pork brain, pig's trotters, pig's tail, chicken feet, stir-fried pork stomach, stir-fried pig intestines, stir-fried pig heart, among others, offer a variety and richness that is unparalleled in other breakfast eateries. Let me tell you about bun cha soup ( Grilled Pork Meat Mixed Noodle Soup).

This dish includes the main ingredients of vermicelli, grilled pork, green onions, bean sprouts, and bone broth. Pork is sliced into long thin pieces or minced to shape into balls then grilled over charcoal until golden brown black. When eating, we can still feel the smoky taste of each meatball, a very sweet and delicious flavor. I like how this restaurant grills meat over charcoal so I can feel the smell of smoke. Currently, there are some restaurants in Vietnam that are very lazy when they fry meat or put it in an oil-free fryer, it really makes this dish lose its traditional flavor. There are some other bad restaurants that add too much MSG to the noodles or pho to sweeten the dish, which is really unethical, but the MSG flavor and natural sweetness from the bone broth along with the juice from the fruit mixed in, the broth has a completely different taste. When I eat broth with a lot of MSG, I often get drunk and have neck and shoulder pain. For restaurants add too much MSG, I usually only eat it once and never go back. I highly recommend this restaurant's broth, it's light and sweet, served with crunchy bean sprouts, it's delicious. One commendable thing about this restaurant that I must mention is that they prepare a full range of spices so that diners can adjust the flavor according to their preferences such as: garlic vinegar, fresh chili vinegar, spicy dried chili, salt, fish sauce, spicy and sour pickled bamboo shoots, and raw vegetables.

Oh and this is my favorite dish, mixed vermicelli. In the area where I live they don't sell this dish, every time I crave this dish I have to go to another area 30km from my house. It's great that I found this restaurant with food that I love.
This mixed noodle dish includes bean sprouts, vermicelli, grilled meat, dried onions, peanuts, and tofu.

Bean sprouts are deep-fried until golden, bean sprouts are blanched in boiling water, onions are fried until crispy and golden, peanuts are roasted and then shredded, vermicelli noodles are mixed with soy sauce and other spices.

All combined together create a dish with great taste and the crispy taste of the ingredients. The food is served in a large and beautiful bowl, a full bowl of vermicelli and costs only 30,000 VND (about 1.2 dollars), so it's worth a try, right?
