Ebony foundations (Palo a pique)
In the kitchen of an elderly aunt, back in the untamed state of Bolívar, the thick steam from the ‘Palo a pique’ filled the afternoon air. To us, they were mysterious treasures; at first, we were made to eat them, but as we grew older… In my native Venezuela, we call them ‘caraotas’, although in other parts they are known as ‘porotos’ or ‘judías’. For children, they are the magic beans that reach the clouds, but for the whole world they represent the true driving force behind life and health.

I vividly remember the sheen of each black bean, harmoniously mixed with the rice and seasoning. That legume is the very foundation of our resilience. It doesn’t matter whether you’re a millionaire or penniless; beans bring everyone together at the table, without distinction. They’re the protein that never discriminates. Whilst my aunt was serving the dish, she would always say that every little seed held the earth’s primal power.
A foreign traveller who visited us years ago (in 1970), upon tasting that Guyanese delicacy, exclaimed with genuine amazement: “This is a delicious bean”. And he was absolutely right. Beyond the technical name or the social status accorded to it in different parts of the world, the bean is the universal language of a satisfied appetite.
Today, as humanity searches for urgent solutions to the food crisis, I look at my plate and realise that the magic lay not in the giants of the fairy tale, but in our humble earthenware pot. The bean has saved entire civilisations, adapting to arid soils and weary hands. It is the fuel of the people, indispensable and noble. Every mouthful is a reminder that true wealth lies in nourishment.

Cimientos de ébano (Palo a pique)
En la cocina de una vieja tía, allá en el indómito estado Bolívar, el denso vapor del "Palo a pique" llenaba el aire de la tarde. Para nosotros eran tesoros oscuros, que al principio, comíamos obligados, pero al ir creciendo... En mi Venezuela natal les decimos caraotas, aunque en otros rincones los llamen porotos o judías. Para los niños, son los frijoles mágicos que alcanzan las nubes, pero para el mundo entero representan el motor real de la vida y la salud.

Recuerdo con nitidez el brillo de cada grano negro mezclado armoniosamente con el arroz y el aliño. Esa legumbre es la base fundamental de nuestra resistencia. No importa si posees una gran fortuna o si el bolsillo está vacío, el frijol une todas las mesas sin distinción alguna. Es la proteína que jamás discrimina. Mientras mi tía servía el plato, siempre decía que cada pequeña semilla guardaba la fuerza telúrica de la tierra.
Un viajero extranjero que nos visitaba hace años (1970), al probar aquel manjar guayanés, exclamó con genuino asombro: "This is a delicious bean". Y tenía toda la razón. Más allá del nombre técnico o del estatus social que le otorguen en diversas latitudes, la habichuela es el lenguaje universal del hambre satisfecha.
Hoy, mientras la humanidad busca soluciones alimentarias urgentes, miro mi plato y entiendo que la magia no estaba en los gigantes del cuento, sino en nuestra humilde olla de barro. El frijol ha salvado civilizaciones enteras, adaptándose a suelos áridos y manos cansadas. Es el combustible de la gente, indispensable y noble. Cada bocado es un recordatorio de que la riqueza real es nutrir.

That's right, the delicious "palo a pique," my mother used to make it with pinto beans—a real treat. A spectacular source of protein, and as she says in her writing, it's a lifesaver for us all.
