Ingredientes:

• 2 huevos.
• 1 ramitas de cebollín.
• ½ media berenjena.
• ½ medio calabacín.
• ½ cebolla.
• ¼ de pimentón.
• Sal, pimienta y orégano al gusto.

Preparación:

Empezamos lavando la berenjena y el calabacín.

Picamos la berenjena, el trozo pequeño y la pongo a remojar con agua y sal para sacarle lo amargo.

Ahora colamos la berenjena y la dejo escurrir.

Por otro lado, monto un calderón a calentar a fuego medio con una cucharilla de aceite, cuando esté bien caliente le agregamos los vegetales a saltear hasta que la cebolla esté tierna.

Ahora le agregamos la berenjena y lo vamos salteando, le agregamos sal al gusto, dejamos a cocinar a fuego lento.

Le añadimos el calabacín y le pongo pimienta, orégano y salsa de inglesa y lo removemos, lo dejo cocinar por unos 5 minutos tapados.

Mientras batimos los huevos con un batidor hasta que quede espumoso, destapamos los vegetales y se lo agregamos, lo expandimos por todo el alrededor.

La tapamos y cuando esté dorada por lado la volteamos y la dejo cocinar 3 minutos más, cuando esté dorada por ambos lado la retiramos a disfrutar.
