Pickled Vegetables, Tomato And Fish Soup
In the summer people are afraid of greasy dishes, so soup is the perfect choice for meals. Today I will send you a soup from my hometown, a traditional soup only available in Vietnam: salted vegetable with fish and cartilage soup. My mom is also fan of this ubiquitous soup and she taught me how to cook it. This soup is easy to make and doesn't take too much time to cook. Crispy pickles combined with soft sweet fish and sweet pork cartilage make a wonderful soup with several bowls of hot rice!

Cut fish into big pieces and drained well. Rinse fish under running water to remove fish blood. If you don't have tomatoes you can use tomato sauce. Cut the pork cartilage into bite-sized pieces, and blanch them in a pot of boiling water for about 10 minutes to remove any dirt. After boiling for 10 minutes, take the pig pork cartilage out and rinse again with cold water. Plus, you will have a tastier, non-funky-pork-smelling soup. Bring to a boil and then let it simmer with tomato on the lowest heat for about 1 hour until pork cartilage is very tender. Or you can use a pressure cooker to soften the pork cartilage, it only takes about 20 minutes. | Cắt cá thành từng miếng to, để ráo. |

Salted vegetables or pickled mustard greens ( i buy them from the local Asian grocery. This is a fermented salted vegetable of Vietnam that Vietnamese people often use to cook fish and stir-fry with pork, beef, chicken. This vegetable is fermented for 2-3 days and it has a sour and salty taste, it is often used as a side dish next to greasy dishes. You need to wash this salted vegetable several times with water and squeeze out the water. |
