A Super Moist Vegan Banana Bread Recipe

Turn overripe bananas into vegan bread that is super delicious and has the perfect moist texture even without eggs.

Don't be afraid to try making cake or bread with no eggs, and also using plant-based milk. With the right measure of the ingredients, we can get bread with a moist texture. Not hard or dry in texture at all.

Banana bread is an easy recipe for beginners. You just need to overripe bananas as the main ingredient.

Living in an area that has a large supply of bananas means that I often have bananas that are too ripe. So, banana bread could be a solution to avoid overripe bananas being wasted.

I'm very happy that the banana bread worked perfectly this time (in my opinion). I just bought a new baking container made of glass. That makes me excited to share this vegan banana bread recipe with you.

You can see for yourself how moist the texture of this banana bread is. Also, it crumbles easily when cut into pieces because it is too soft.

In this recipe, I use chocolate chips. But you can skip there ingredients or replace the chocolate chips with almonds or walnuts. Stay tuned for the ingredients and complete cooking instructions. ❤️




THE INGREDIENTS

dry ingredients

  • 1 3/4 cups of all purpose flour
  • 1/2 tsp of cinnamon powder
  • 1/2 tsp of vanilla powder
  • 1/2 tsp of salt
  • 1 tsp of baking soda

wet ingredients

  • 3 overripe bananas
  • 1/2 cup of brown sugar in a fine granular texture
  • 2 tbsp of plant based milk (here I use coconut milk
  • 1/3 cup of vegetable oil

filling and topping

  • 1/2 cup of chocolate chips / almonds / walnuts



COOKING INSTRUCTIONS

Mix Dry Ingredients

In a container, mix all the dry ingredients (flour, cinnamon powder, baking soda, salt, and vanilla powder). Stir well using a balloon whisk. Then, set it aside.



Mash Overripe Bananas

In a large container, add overripe bananas. Then, mash overripe bananas with just a fork.



Mix Wet Ingredients

Once ready with the mashed bananas, then add all the wet ingredients: brown sugar, vegetable oil, and coconut milk. Mix well using a balloon whisk.



Mix Dry And Wet Ingredients

Done with the wet ingredients, add the dry ingredients to the wet ingredients. Stir using a spatula slowly but do not over mix.



Add Choco Chips

Add chocolate chips to the dough. Stir slowly again but be careful not to over mix as well.

Also, add chocolate chips to the top of the dough after transferring the dough to a baking tray.



Transfer The Dough Into A Baking Tray

Prepare a baking tray. Here, I use a baking tray made of glass which is safe for baking and roasting food.

At the bottom of the tray, I added baking paper so that the bread would be easy to remove from the baking tray.



Bake The Dough

Don't forget to preheat the oven to 185 degrees Celsius. Then, bake for about 45 minutes.

I'm really happy that the banana bread can rise beautifully when baked! So beautiful moment when watching the bread rise perfectly in the oven.



Remove Bread

After removing bread from an oven, remove bread from baking tray. If you have difficulty because you don't use baking paper, you can wait for the bread to cool completely.

Look at these beautiful vegan bread! I didn't expect their texture to be that moist even though they didn't use eggs.

Honestly, I prefer this banana bread version to the Starbucks version. Also, it's cheaper because it's homemade 😛😛😛

Apart from that, the scent of cinnamon powder that is not excessive is the main key. Do not use more than 1/2 tsp.

it is a very healthy way to make a sweet bread. I will try it without the brown sugar because I can't eat much sweet for health reasons but I'm sure it will be delicious like this one! 😍

indeed, reduce the brown sugar because the banana is already sweet, I added sugar because my mom-in-law just loves sweet things and has no health problems. for me, I just eat one scoop of this bread ehehe :) the rest are for my family and neigbors

Every time I bake a banana cake, the result is always different haha .. sometimes fine, sometimes failed 😂 I can't be a good cook, lol..

The mixing motion is important thing. When you over mix, the dough is failed to be raising 😅 no problem because we just need to take action consistent in the kitchen
