Cooking Water Spinach From TGarden With Corn Vermicelli

Corn vermicelli is suitable to be combined with green veggies, one of which is water spinach.

Some time ago, I shared with you my first harvest of water spinach. A few days later I harvested all the water spinach to share with more neighbors. I feel satisfied like I feel satisfied when I share the results of my cooking with other people.

I left some water spinach for me and my husband. So, in this blog, I will share how to cook water spinach with other ingredients such as corn vermicelli and tempeh.

Corn vermicelli is my husband's favorite. It is perfect to combine with the remaining stock from the water spinach. You can use other types of noodles or pasta too.

I only used two handfuls of water spinach for this recipe, which was mixed with 100 grams of noodles, also 100 grams of tempeh which was roasted using an air fryer. This can be served for 2-3 servings.

For the seasoning, I use hot chili sauce. If you are not a spicy lover, then you can skip this spicy chili sauce recipe.




The Ingredients

  • 2 full handfuls of water spinach
  • 100 grams of corn vermicelli

  • 3-5 small cloves of garlic, finely chopped
  • 2 tablespoons of sweet soy sauce
  • 2 tablespoons of spicy chili sauce
  • a thumb-sized ginger, flattened
  • 1/2 teaspoon of salt

for roasted tempeh

  • 100 grams of tempeh
  • 2 tablespoons of coconut oil or olive oil
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of coriander powder



Cooking Instructions

First, I prepare the tempeh because it will be roasted and will take longer to process. Mix 2 tablespoons of coconut oil or olive oil, with 1/2 teaspoon of salt, and 1/2 teaspoon of coriander powder.

Add tempeh to the oil mixture then arrange into the air-fryer basket.

Roast tempeh for 15 minutes per side.

Boil water, about 1 liter. Then, boil the corn vermicelli for around 4-5 minutes. Check the back of the packaging of each vermicelli product to determine how long you need to boil the vermicelli. So it's not overcooked. Then, drain and set aside.

Cut water spinach into pieces. I only use bare hand without a knife. By using our hands, we can find out which parts are hard and cannot be included in cooking. Then, wash it clean.

Heat some vegetable oil. Then, add chopped garlic and flattened ginger. Stir-fry for a while until it smells fragrant.

Add water spinach. Stir-fry for about 5 minutes or until the texture suits your taste.

After the water spinach is cooked, then add boiled corn vermicelli, also add sweet soy sauce, spicy chili sauce, and salt.

Stir well until the seasoning is completely mixed into the water spinach and corn vermicelli. Then, removed.



Serving Ways

Serve stir-fried water spinach and corn vermicelli with roasted tempeh. Also, I added sesame seeds and spicy cassava chips.

pssst, this dish is very spicy and makes us sweat on our foreheads. at least, it keeps us on fire :P

We had a delicious dinner even from simple ingredients. After gardening, we enjoyed a dish with a few ingredients from my own garden. It adds to my gratitude that in this world there is much we can do to stay alive and happy. So, just keep it up and smile :)

I have never tried corn noodles, here in my city of Corrientes there are only wheat flour ones

you should try it. I did it many times with tofu or tempeh in an air-fryer. crisp, and with coconut oil will be juicy (for olive oil, just crispy in texture :)

The best way to eat water spinach is to harvest it because the stems are very crunchy, like eating chips :D

I like people who give from the heart, who always share a little of what they have, that speaks very well of you my friend and with respect to the dish, here in my country I have only tried rice pasta when my son was a baby and his diet was gluten free. Haha, here's something else I haven't heard. Vermicelli looks like a thinner version of spaghetti and the color is darker. It's probably made of something else. Still, this meal looks delicious.

zero spicy is okay. just use sweet soy sauce. :) usually I just use garlic and sweet soy sauce if I cook for my nephews

just skip any chili ingredients. just use sweet soy sauce. I did it if I cooking for my nephew as well :)

I had never seen the water spinach I think only once and on tv, I have spinach in my house but it is broadleaf and I always pull leaves and leave the stem sown to keep it producing, the roast reminded me a lot when I prepare eggplant milanesas they have the same look already cooked, I love your photos worthy of a MasterChef.

water spinach has different stems from spinach in general. water spinach can be easier to find in Asian countries. :)

the water spinach stems are crunchy in texture :)
