Fresh And Sweet Pudding Kiwi Coconut Milk

For a moment stay in place. Meaning many things. Sometimes with laughter, sometimes also with sad stories that make us strengthen and support each other. That's what we do at dessert time. We used the time after eating to tell stories and enjoy desserts.

I prefer the word "fresh" compared to the word "sour". maybe for those who don't like kiwi, will say that kiwi tastes sour. But for people who like kiwi, it will be a fresh and sweet taste. I love kiwis because they can be a great alternative when I'm tired of the overly sweet taste of fruits.

Do you like kiwi fruit? My mother-in-law's family members were very reluctant to try kiwi because kiwi is not a local fruit in our area. Also, the price is quite expensive compared to local sweet fruit.

Meanwhile, for me, kiwi is a source of good health for the skin. I could eat a lot of kiwis at once if I don't remember what's in my wallet. Oops! A pack of 6 kiwis costs USD 2.

The type of kiwi I bought this time was quite sweet, not too sour. I'm going to turn these kiwis into sweet desserts. I hope with these desserts, people at my mother-in-law's house start to like kiwi. Kiwi is good for health.




Two Layer Pudding

One layer of the pudding is too mainstream. So, I made two layers of pudding, playing with color gradations. On the base layer, I used white to create a contrast against the transparent top layer.

For the white layer, I mix coconut milk with agar powder. Meanwhile, for the transparent layer, I used a mixture of water and agar powder. As another addition, I use pandan leaves as usual which I often use in other dessert recipes.


The Ingredients.

  • two packages of agar powder, or 5 grams per peach layer.
  • some pandan leaves
  • 500 ml of coconut milk for the white layer
  • 500 ml of water for transparent layers
  • 100 grams of sugar per layer, a total of 200 grams of sugar.
  • 2-3 Kiwis

Cooking Instructions.

Slice Kiwi.

First, prepare kiwi fruits. Make sure that the kiwi fruit that will be used for the dessert creations this time is not too ripe. If it's too soft, the kiwi will fail to slice properly.

Peel the kiwi fruit carefully. I used a small, thin knife to peel the kiwis. After peeling, then sliced not too thin. Make sure the sizes of the kiwi fruit slices are not too different.

Set aside. I store the kiwi fruit slices in the refrigerator before processing them together with the agar powder mixture.

Prepare the ingredients for the white pudding layer. Mix agar powder, coconut milk, sugar, and pandan leaf. Stir them well before the fire is lit.

Once you don't see any lumps of agar powder, turn on the fire and bring them to a boil. Keep stirring them throughout the cooking process so they don't burn.


Transfer White Pudding Mixture Into A Pudding Mold

After the fire is turned off, keep stirring the white pudding mixture until the hot steam seems to disappear. Only then is it transferred into a pudding mold. Make sure to use a mold that is easy to remove to make it easier to remove the pudding later. Then, set aside while preparing the transparent pudding layer.


Cooking Transparent Pudding Layer.

Mix agar powder, sugar, water, and pandan leaf. Stir them well then cook them until they boil just like the method for the white layer.


Keep the Pudding Mixture in the Refrigerator.

After setting the transparent layer on top of the white layer, store them in the fridge for at least two hours before serving. **Important Tips: add slices of kiwi fruits on top of the white layer that has been set, then add the transparent pudding mixture little by little using a spoon. Don't pour the transparent mixture all at once using a glass or sauce container because it will damage the arrangement of the slices of kiwi.


Serve!

Serve the kiwi pudding in beautiful pieces. I cut the pudding into squares, each piece of the pudding has a slice of kiwi fruit. Oh, looks cute and fresh!

I'm grateful that my husband and family members like the Kiwi fruit creations this time. They say kiwi fruit is sweet. Not bad to eat on a hot day. Those were words that put my heart at happiness.

Kiwi is also expensive in my country rather than our local fruits.

Oh, it's so delicate and beautiful! For me, kiwis are fresh and taste like strawberries+banana 😄 Kiwis are also expensive here; you could pay more than $1 for a unit, whereas you pay the same for a whole pineapple, or less than that for 1kg of bananas.

I saw two recipes from you using agar-agar powder, similar to gulaman powder here in our place. I haven't make one yet hopefully I can have time to make some soon.

Thanks for sharing this recipe, we can make it with any fruits available right? Kiwi is so seldom to be seen here in our market and if we do it is so pricey too.

Yes same as gulaman powder. You can use any fruits. Watermelon or try the sour one to make nice combination 🙂

Boleh juga tuh idenya bikin pudding pake topping kiwi. Aku pernah bikin pudding pake topping potongan stroberi & pisang, tapi hasilnya jelek. Stroberi & pisangnya jadi kematengan/kehitaman karena kena panas puding yang baru mateng pas dituang ke cetakan 😅 Apa harus nunggu agak dingin dulu ya baru tuang ke cetakan?

Kalo pisang, big no klo buat topping ehehe. Kalo stroberi, yes.
Biasanya abis diangkat dr kompor, aku aduk-aduk untuk hilangkan uap panas. Terus diamkan lima menitan baru dituang kecetakan.
Kalau pake buah di dalam cetakan, tuangnya pake sendok aja biar buahnya gak berantakan 🤭
