Upgrading My Homemade Ice Cream Recipe: Bananas With Butterfly Pea Flowers
In one type of homemade food and beverage, there are lots of ingredients. I also always upgrade the recipes that I have previously made.
Every day I watch Youtube or Instagram find inspiration for new recipes. Every day too, I always try to get the latest information, for example about comparing one food to another about its health value, or just looking for the easiest way to make food that I have made before.
The upgrade is my way to be able to make food easier to make, healthier, and the important thing is to save money.
So I am happy when I get new updates about food and I will be happy to share with my readers on the blog.
Banana and Butterfly Pea Flowers Ice Cream
This time I have an upgrade about homemade ice cream recipes. My ice cream recipes in the past are only made from pure fruit juice and frozen coconut milk.
Now I add another ingredient that will make the ice cream softer.
I also added a special ingredient, namely Butterfly Pea Flowers water to the banana ice cream mixture.
Let's get started!
Ingredients
- 200 grams of ripe bananas
- (OPTIONAL) 50 grams of melon, you can skip this fruit.
- 300 ml of coconut milk
- 50 ml of Butterfly Pea Flowers Water
- 50 grams of cornstarch
- A pinch of salt
How to make
- Step 1
Blend all ingredients. You can add Butterfly Pea Flowers Water at the end if you are preparing Butterfly Pea Flowers Water while blending the fruit mixture.
- Step 2
Strain the blended fruit mixture and place it in the cooking pan.
- Step 3
Add Butterfly Pea Flowers Water.
- Step 4
Cook until the mixture thickens and bubbles appear on the surface.
- Step 5
Transfer the ice cream mixture to ice cream trays. If you don't have an ice cream stick, you can use an ordinary bowl to scoop it later when you want to serve it.
- Step 6
Let it cool, then put it in the freezer overnight or at least 3 hours. No need to worry if it's too fast because in this recipe it uses cornstarch so that the texture is easier to solidify and freeze.
Result
I'm glad upgrading my ice cream recipe has had such great results. The texture of this ice cream is softer than fruit ice cream which is made without cornstarch.
The banana ice cream color with Butterfly Pea Flowers is not as good as I imagined before. It looks like the color of the Butterfly Pea Flowers water is inferior to the fruit mixture so the color isn't too bright.
This homemade ice cream is worth trying with soft texture :)

Oh what a great experiment! Yes, it's a shame it lost the colour of the bright water, but still a cool idea!!! And your icecreams look so cute. I wouldn't have thought of cornstarch making it creamier - does it change the taste at all?
I often use cornstarch for making pudding too.
