Pulled Pork Pecan Pie Pancakes! 🥞

Now, that you've had your appetizer of alliteration. Let's move on to the details that hopefully will lead fo salivation! 🤤

After being inspired by @braaiboy's Triple Stack Jack Flapjacks, decided to put my own spin on a pulled pork recipe and it came out better than expected!

At first I had some reservations due to the fact that the pork would marinated in a cayenne vinegar based sauce (Bulliards namely) as is customary for North Carolina pulled pork recipes (whereas mustard based would be the norm for South Carolina style). Even so, the flavor actually meshed quite well and was not overbearing at all.

I learned these things while stationed on the East coast but am currently in Texas.

Pulled pork about 30 minutes out of the smoker after a good shredding!

Recipe:

  • Pork Shoulder aka Boston Butt
  • Bulliard's Cayenne Pepper Sauce
  • 2.5 Gallon Storage Bags or other suitable bag to marinate
  • Pancake Mix
  • Backwoods Pecan Pie Liqueur
  • Maple Syrup (I chose dark but your preference)
  • Whipped topping (optional)
  • Milk
  • Butter
  • Cooking oil

Phase 1 Smoking the Pork Shoulder

First Cut

  1. Fire up your wood pellet (Traeger style) smoker and allow time for preheating.
  2. Place pork shoulder on smoker with fat side UP!
  3. Smoke until internal temperature reaches 200°F or about 94°C. Remove from smoker and carefully wrap tightly in foil. This method is sometimes called the Texas Crutch. Don't hate. 😛
  4. Put back into the smoker. Allow to smoke until temperature recovers and reaches about 210°F or about 99°C. (I was cooking while outside temp was 36°F so it took some time in my case)
  5. Once desired temperature is reached, remove pork from smoker and place somewhere allowing it to sit for at least another 30 minutes.
  6. Unwrap and proceed to SHRED! I used a couple forks but they do sell bear paws and gloves if you wanna be FANCY! (Image below)

Phase 2 Pancake Prep

Nothing fancy here. I used Betty Crocker pancake mix and followed the instructions with one slight modification. Instead of milk or water, I went half milk and half water.

As for the syrup, I did the same with half dark maple syrup and half Backwoods Pecan Pie Liqueur heated to a slight simmer in a container.

So as to not reinvent the wheel. Here are the instructions I used on the Betty Crocker batter box. I used a combo of cooking oil and butter which is optional.

Final Phase Stack, Pack, and Enjoy!

Take a pancake, douse it in syrup, place a generous portion of pulled pork, douse it in syrup. Repeat in number of stacks as desired. If your stack looks like the GIF, you may have gone TOO FAR!

It's not bad really. I mean it may not be standard choice but if you think about it pancakes and bacon pair together quite well. It's a new take and glad @braaiboy shared it.

Prob be a regular thing now but my go-to would still probably be Hawaiian roll hamburger buns, cole slaw and pickles w a side of potato salad. Found these sweet and spicy pickle chips that really did the trick!

I didn't get this pancakes thing you have until a trip to Denny's in 1989. Even then I was not a fan, ...savoury with savoury I say!!

Now that you mention it. They had some strawberry pulled pork at the Poteet Strawberry festival a few years back that was mouth watering.

I tried and failed to replicate this thinking a brine would work. Turned into a salty mess. Wished I knew how they pulled it off. 🤔

I usually replace (my style) the pancakes with some crunchy oven or freshly made bread (hard crust type) and some garlic butter to bed the bread before adding the pork. Then accompanied with olives on the side, some goat cheese and a glass of red wine... hummm

The problem is liking too much food as usual 😜
