Strawberry Custard Rolls | Trying Out a YT Shorts Recipe

Viral Recipes, Anyone?

So... I was browsing through some videos on YT when I decided to check out some shorts. Not the clothing kind of shorts, but a video kind of shorts. This one poked my attention.

It's from none other than the Philippines' Lumpia Queen herself. I think she rose to fame in TikTok, but I saw her first in YT. From a few videos I've seen, she tries to "lumpia (spring roll) everything". This one looks so good, she even commented - "This is the best lumpia we've ever made."

I know immediately that I would love to try it.

What you'll need:

  • fresh or frozen strawberries
  • sugar
  • lemon juice
  • cornstarch
  • water
  • lumpia wrapper (spring roll pastry)
  • egg yolks
  • all-purpose flour
  • milk
  • cheese (optional)
  • vanilla

Good thing I have all of these in my kitchen. So what are we waiting for? Let's try it!

The strawberry jam

As in the video, just cut a handful of strawberries, add sugar and lemon juice. Let it sit for a while until the juice extracts from the strawberry. Cook over medium-low heat until the fruit breaks down and the sugar turns syrupy. Finally, add cornstarch slurry to make it thick and stable. Let it cool.

Custard

I dedided not to add cheese this time like what's on the video. And since I do not have enough cornstarch, I just used all purpose flour to make the custard.

In a pan, mix together 2 egg yolks, 2 tablespoons of all-purpose flour, 4 tablespoons white sugar, 1 cup milk, vanilla. Let it simmer over low heat until it thickens.

I tend to eyeball my ingredients most of the time and the above measurements are just what I remember from who I did it. You can try to adjust the sugar according to your taste. Gradually add the milk so you achieve a thick and stable custard that you will not have a hard time folding into a spring roll wrapper.

Let it cool.

Assembling our strawberry -custard rolls

Scoop a tablespoon of custard and a tablespoon of the strawberry jam and put them on the spring roll wrapper. You may have to double wrap to make sure the jam does not ooze out of the spring roll pastry. If you want a thick and flaky roll, then you can even add more layers of pastry sheets.

I made a batch where I added slices of plantain banana to make sort of an upgraded turon. Turon is a Filipino desert made of plantain banana wrapped in lumpia wrapper (spring roll pastry).

Fry until golden brown, and voila!

Make sure the oil is not extremely hot that it would cook the spring roll very fast and risk burning it. Deep fry the rolls over medium heat until the pastry wrapper is golden brown and crispy.

Serve it hot with black coffee or vanilla ice cream, however you wish. You will not go wrong. It is indeed, soooo good!
