I grew up with the Dutch idea of the whole bird feeding our family of 6 for 3 meals. Day 1 was always the whole bird browned in butter and cooked on the stove top in a Dutch oven. Day 2 would be some kind of a rice or pasta dish using flesh picked off the carcass. And day 3 would be slow cooked chicken soup with lots of veggies and rice.
You are so right about the flavor of a free ranged, organic chicken!

Actually, in winter, I do a whole lot more - if not soup, then I make stock. Nothing better than one's own stock for risotto or other dishes.
