Egg Martabak With Cuko Sauce

Hello everyone and foodies bee hive community..
How are you all? It's a very cloudy evening at my house. Looks like rain will come and wet the surface of the earth around my house area. While waiting for my husband to come home from work, I unpacked the contents of the refrigerator and found some ingredients that were almost expired.

A few days ago, I had time to make risole from spring roll skin. Because I'm lazy to make risole skins, so I just bought spring roll skins. Then I put it in the refrigerator, and I was surprised when I found out that the spring roll skin was almost expired. As a human who doesn't want to lose, I have to use some of these spring roll skins into a very delicious meal. I'm afraid that it won't taste good, no one in my house will eat it.

I also found 2 leftover eggs, leeks and some other ingredients. I think it's good to have a snack while sitting looking at the rain with a glass of warm chocolate. Then I remembered, a food that I really liked when I was in college in the city of Padang. There is a restaurant called 'Malabar' and it sells Indian egg martabak. Indeed, the owner of the restaurant is of Indian descent, and I don't know whether the restaurant still exists or not, but what is clear is, if you go to Padang city, I recommend Martabak Malabar to be one of your culinary destinations.

Well, because I'm not good at making martabak skins well, and making martabak skins isn't easy either, there are many techniques and I've never tried them, so I'd rather just use spring roll skins, which are almost expired in one week. I hope I'm still healthy after eating the spring roll skin. *lol

Ingredients for Egg Martabak With Cuko Sauce:

Martabak Egg Ingredients:

  • 10 sheets of spring roll skin
  • 2 chicken eggs (best using duck eggs, but I ran out of duck eggs stock)
  • 2 sheets of leeks
  • 1 sheet of celery
  • 1/2 Onion
  • 3 cloves of shallots
  • 1 clove of garlic
  • Pinch of salt, chicken stock powder and ground pepper.

Cuko Sauce ingredients:

  • 200 ml of water
  • 2 cloves of garlic
  • 3 pcs cayenne pepper
  • 50 gr palms sugar
  • Lime leaves
  • Pinch of salt
  • Soy sauce




How to Cook Martabak Egg With Cuko Sauce:

Making cuko sauce:

  • Boil 200 ml of water until it boils. Then add the finely chopped chilies and garlic.
    Then add 50 grams of brown sugar that has been crushed to dissolve easily. Add 1 lime leaf and add a little salt. Adjust seasoning and set aside into the sauce bowl.

Making Egg Martabak:

  • Thinly slice the onion, cayenne pepper, garlic, leeks and celery. Then put it in a bowl.

  • Crack 2 eggs and put them in a bowl, stir until well combined.

  • Add chicken stock powder, ground pepper and salt. Then mix until completely blended.

  • Take 1 piece of spring roll skin, put it in the middle of the spring roll skin and fold it into a square shape, repeat again on another spring roll skin.

  • Heat the oil in a wok pan, then after it is hot, add the martabak mixture into the oil. Back and forth until fully cooked golden brown.

  • Remove from wok pan and drain until the oil is reduced. Plating on a plate.
