Japchae Sohun, A Good Food For Diabetic
As a diabetic, I learned a lot of things, like knowledge related food ingredients which greatly affect the increase in spike glukose blood, is called glycemic index. That's why, learning is important to know what is good and bad for my body, the prevention of chronic diseases that have started in millenial generation. isn't it?
Millennials like me, have had a lot of cases like that, I have found many cases, I know a lot of this information from social media. For example, i have a friends in sosial media, who has diabetes at the age of 25, even younger than me, its so crazy! She inspired me a lot, she said never use insulin to control her blood sugar anymore, but living a healthy and balanced life help her to recover and keep the body fit.
One thing that helps besides exercise, is about maintaining proper food intake for diabetics, so she always memorizes what foods are suitable for herseld, she even has a list of ingredients and gives it to me so I can learn a lot, of course.
As a noodle lover, yas, im a noodle lover lol. It's really hard for me to get away from it, it seems I can't live without noodles. Noodles everytime, even I can live without eating rice. You must know about fact of noodles, are ultra-processed foods that are bad for the body, but I believe that maintaining mental health is also a process that is good for the body and soul, so we can be healthy and happy, its important things. But dont eat noodle everytime, eat when you want.
The noodle i mean is about sohun, different from vermicelli which is slightly smaller in size than vermicelli. Made from potato, sweet potato or cassava starch which has a glycemic index that is not too high than white rice, complex carbohydrates that can be consumed by diabetics and also have good fiber. yas, have a much of fiber, I really like sohun, moreover, the taste is very good, soft on the tongue and the texture is quite different from other noodles.
Well, this time I made a japchae, you must know what japchae is! The famous food comes from South Korea, but this time I made it simpler and richer in spices. While I came home from the gym and was very hungry, I decided to eat japchae sohun which will be my fiber and carbohydrate filler this morning.
INGREDIENTS;
The ingredients that you have to prepare are;
- 100 gr Sohun
- 150 gr carrots and 50 gr green beans (as a source of fiber)
- 3 shallots, 3 garlic cloves, 3 cayenne pepper and 1 candlenut (as spices that will make this japchae delicious and rich in taste)
- 1 leek sheet
- 1 tsp sesame oil, 1 tsp low calorie diet kecap and 1 tsp soy sauce
- Salt, pepper and mushroom stock as natural flavouring
STEP BY STEP TO MAKE A JAPCHAE SOHUN
- Take the sohun that you are going to use, usually vermicelli is a dry ingredient that must be soaked first so that it expands more and can be eaten. Take 1 large bowl and 1 liter of water as a marinade, it only takes 10 minutes for sohun to work.
- All spices are mashed, but wash thoroughly first and put it in a clean blender. You need a measure for yourself, but you can use the measure that I have written above. This sohun japchae will not disappoint you.
- If you don't have carrots and beans, you can use other ingredients vegetables, whatever you like. I use carrots cause yesterday it was given by a friend who had just harvested a lot of carrots. peel the skin of the carrot and slice thinly, as you like for this, as long as you like it! Slice thin also beans, previously to be washed first.
- In cooking this japchae, I prefer the Indonesian style, using ground spices that have been blended and put into the preheated wokpan. Wait until the water is slightly dry and add the sesame oil that you have prepared.
- Now, put the source of fiber, namely the vegetables that have been prepared earlier, into the wokpan filled with ground spices that have been stir fried, don't forget to season with salt, mushroom broth, soy sauce, soy sauce and pepper. Stir everything together to become an essential component of making japchae.
- Before you adding sohun, you have to drain it first, then mix it into the wokpan. After everything is perfectly mixed, then you serve it on your beautiful dinner table and plate!

There's a lot to learn about diabetes and how to prevent it in a world where most of the food might be killing you. Millennials came to this messy world. Not a good inheritance.

I think diabetes is the enemy of today's millennial gene, especially many parents who have never known their health well and pass it down like an inheritance. Looks like I prefer money over diabetes as an inheritance :D
