Bircher Museli: Simple but Delicious Breakfast!.jpg

When I'm on tour, I tend to eat a pretty decent breakfast... in fact, much of the time, I tend to eat more (and then skip a bit on the lunch/day time meal) and also just eat healthier... One of my favourite dishes for breakfast (when it has been available at the hotels...) is the Bircher museli. I had thought that it would be quite difficult to make... but in the end, it really isn't... but it does need to be put together at least the evening before, to allow time for everything to soak and be ready for the breakfast the next day!

You probably need only about half an hour at most to put it all together, and then to just leave it in the fridge overnight. Simple but delicious... and there is nothing better than just pulling the bowl out in the morning with nothing more to do than to spoon it out into an eating bowl!

So, the ingredients that you will need will vary a little bit depending on how strictly you want to follow the "Bircher" original. For me, I have tried many different types and variations on the theme all around the world... and so, I'm more happy just winging it with whatever I have around.

The basic stuff that WILL need will be apples, apple juice, yoghurt, and rolled oats. The optional extras that I used for this particular version were a few extra pears and some dried fruit. I'm afraid that you won't find any particular measurements here... I'm the sort of person who just does dashes of this and that... which is probably why my desserts fail so spectacularly!

First up, roughly grate up the fresh fruit... green and red apples, and in this case, some pears as well. It is a good chance to use slightly over-ripe ones or ones that are just a little bit under-ripe. So, everything in the fruit bowl that isn't really best to eat at that very moment. Keep the skins on, but keep the cores and seeds out!

In a different bowl, pour out some rolled oats... and pour in the apple juice. I just use boxed apple juice... it is good enough, and it saves time!

Combine all the ingredients together in a bowl... perhaps a larger one than I used! So, that would be the juice and rolled oats at the bottom, dried fruit and fresh fruit gratings next... followed up by a healthy dollop of thick yoghurt. I prefer Greek Yoghurt... but use anything that isn't heavily flavoured.

Mix it all up... and it should look like this. It will be a little sloppy... but resist the urge to add more oats to soak up the liquid. The oats that are already in there will soak up the liquid overnight... if you add more, then it will look okay now... but it will turn out gluggy and solid the next morning when you come to eat it!

... and here it is after a night in the fridge. Ready to spoon out and eat! Healthy and tasty! I feel like you don't really need to add anything... the juice and fruit make it sweet enough. However, I have seen it served up with a little bit of honey or honeycomb... and that does really make it into a gourmet breakfast treat!

Either way is good... but for me, just spoon out and eat! This amount will probably last me a few days, and it is served up cold... so it does also make for a nice summer breakfast or daytime snack. In fact, I would even wager it could even make for a nice evening snack/dessert!

Poloniex: One of the older regulated exchanges that has come into new ownership. I used to use it quite a lot, but have since stopped.
Bitfinex: Ahhh... another oldie, but a goodie exchange. Most noted for the close affiliation with USDT and the Basic "no-KYC" tier!
