Sharing 10 year old cookies | Simple Cookie Recipes

I would just like to present a few different kinds of cookies that I made about 10 years ago. 🤤😋
Those are very simple recipes for cookies with only few ingredients. Basic ingredients in the recipes are flour, eggs, sugar, oil/butter and baking powder.

LINZER COOKIES

Ingredients:

  • 500 g of sifted all-purpose flour
  • 330 g of chilled butter (refrigerated)
  • 160 g of sifted powdered sugar
  • 4 g of baking powder
  • 1 tespoon of vanilla paste
  • 1 egg
  • ½ teaspoon of grated lemon zest
  • 120 g of homemade marmalade (I used strawberry)
  1. Sift all dry ingredients in a bowl and add vanilla paste, lemon zest and egg. Knead it with your hands forming a ball. Let it refrigerate for at least 2 hours (preferably overnight).
  2. Roll the dough 5mm thick and cut it using a cookie cutter. Bake it in a preheated oven at 170 °C for about 8 minutes.
  3. Let the cookies cool down. In the meantime, heat up the marmalade in a small pot. Cover one side of a cookie with hot marmalade and place another cookie on top- just like a sandwich. Let them cool down.

SHORTBREAD CHOCOLATE COOKIES

Ingredients:

  • 115 g chilled butter (refrigerated)
  • 25 g of powdered sugar
  • 130 g all-purpose flour
  • 0.5 teaspoon of vanilla extract
  • a pinch of salt
  • 80 g of chocolate
  • 1 tablespoon of butter
  • 2 tablespoons of candy sprinkles

Preparation:

  1. Sift flour, powdered sugar and salt through a sieve into a bowl. Add butter, cut into cubes. Combine it together with a hands, spatula, or electric mixer, until getting a crumbly mixture. Form a ball out of it. Place a ball of dough into the fridge for at leat one hour.
  2. Roll the dough 0.5 centimeters thick. Use a cookie cutter, a glass or a knife to shape your cookies.
  3. Place them in the preheated oven at 180 ⁰C for about 12-14 minutes.
  4. Melt cocolate with butter and cover half of each cookie with melted chocolate. Shake them with candy spinkles and leave it until the chocolate forms up.

COCOA COOKIES

Ingreditents:

  • 85 g of cocoa powder
  • 120 ml of vegetable oil
  • 400 g of sugar
  • 4 eggs
  • 2 teaspoons of vanilla essence
  • 250 g flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 1 tablespoon of powdered sugar

Preparation:

  1. First, mix cocoa, oil and sugar together. Then add eggs and mix.
  2. In the bowl sift the flour, baking powder and salt. Pour into a chocolate mixture and knead it or use kitchen robot.
    Cover the dough and place it in a refrigerator for at least 4 hours.
  3. Make balls out of dough as big as hazelnuts and put them on a baking tray covered with baking paper.
  4. Bake cookies for 12 minutes in a preheated oven at 180°C.
  5. Shake it with a tablespoon of powdered sugar.
