Fajita Night


Yep... I cook a few times a week. Actually, closer to 5 or 6 nights a week, I've been cooking, last 2 years, since work shut down during the pandemic.

The thing is, I learned from my mom, and Yia Yia, so, when I cook, I almost always cook too much... leftovers are made. This is a good thing, because it means, at least one and sometimes 2 nights a week, I tell my family, go forage for yourselves among the leftovers. BUT, one thing I hate, is tossing food away, during the week. So, we're getting better at making use of the leftovers.

One meat I cook often is chicken, less so for red meat... however, once in a while, there is both beef and chicken leftover! That can mean, a family favorite for dinner: Fajita Night!

I chiffonade some lettuce (shred cut up lettuce into longer strips), cook up some seasoned Onions and Sweet Bell Peppers, put out a bowl of Shredded 4 cheese (Monterey Jack Cheese, Mild Cheddar Cheese, Queso Cheese and Asadero cheese), some sour cream and some Chips, Melted Cheese and Salsa. There's some lemons on the table for those that like to freshly squeeze some zest..

How ever I made the beef and chicken, when I reheat it, I add some Fajita Seasoning: Chili Powder, Cumin, Garlic, Paprika, Cayenne Pepper (TINY AMOUNT!), Onion Pwder, some salt, ground black pepper, and a pinch of sugar. I also heat some flour tortillas, and when people are hungry, they can come to the table and make their own fajitas!

Feeding my family is always a pleasure... particularly if I can do so from my garden. Even better is when, I can make one cooked meal last more than one day or night!

I love to see my family happy and healthy from my garden.

You amaze me! In my country, men say that they aren't supposed to be found in the kitchen and the ones that were at least brought up real good by their mother's which are somehow good at house chores would only appear in the kitchen once in a blue moon when they have a family. They expect their wives to do all the cooking but in your case it's so different. You enjoy cooking and gardening at the same time. Goodness me! I'm soooooooooo impressed. Weldone 🥰. Have some freshly made !PIZZA

I have learned, a real man, treats his wife as a queen. he treats her like a partner and makes sure that she is happy and healthy. She treat's her husband as a king and treats him like a partner, makes sure he is happy and healthy.

Sorry to hear about the lack of work still in your area. Surly, spending extra time with your family is a great benefit though. I personally have chosen to move on from the entertainment buiz and now pursing work in Idaho and taking a crack at Hive as an income in ways. I have other things happening tho. @dynamicrypto and I are getting work calls in Vegas. Is Vegas calling ya?

I can always appreciate a well-cooked meal especially one that includes food growing from your garden! This all looks really delicious thank you for sharing with us! Was there ice cream to go with that root beer?

Did you know @ecotrain just had a weekly question about leftovers? I'm trying to stay mindful of his stuff as he is doing really cool things on Hive, you would probably really enjoy participating in his weekly questions but I'm sure you're really busy with the family especially when you're cooking delicious meals.
