There are days, when, no matter the motivation, I am exhausted and a meal still needs to happen. This is one of my Go To! meals, that I can prepare and cook while asleep, standing up. I've made it dozens and dozens of times, and since we haven't had it in forever, my girls and I enjoyed a welcome break from fancy, or from take away orders out!

Looks delicious. We do something similar but bake it. Not as fast but you can put it in the oven and forget it while you deal with whatever else is going on. And put in whatever veggies we have fresh - hopefully from garden. Doing brussel sprouts right now. Your family is lucky to have a Dad that cooks even when it hurts 🤣

I do too!!!
I will do a tray or two of the baked, when I have more time. Also, I do my pan seared Brussels Sprouts along with the chicken, often. I sear them, then, put the whole cast iron pan into the oven along with the chicken. Meanwhile Make a Balsamic Glaze for the Brussels Sprouts on the stove top.

I learned to cook from my grandmother, and mom. Later, I worked in high school in Kitchens in local Steak Houses, eventually becoming a Kitchen Manager, while in College. Maybe you can take me outta the Restaurant, but not outta the Kitchens!!!

i always try to do about twice what we'll eat at night. The girls take leftovers for their lunches, so happy to send them with something I cooked, rather than them buying at a fast food place

That looks very delicious!
My last minute recipe, easy and quick if you have the ingredients.
4 large potatoes, 1 onion, 6 eggs, 1 large tablespoon butter.
Boil the peeled and diced potatoes until tender. Sauté the finely chopped onion in the butter, add the boiled and drained potatoes and stir over low heat.
Beat the eggs until blended and add them to the potato and onion mixture.
Cover and cook for 5 minutes or until the eggs are cooked and serve.

Sounds fast and easy. AND, if you have any other leftovers, easy to add: Spinach, bit of squash, bit of who knows, bit of this and that, too.
