Vegan basil and oregano cheese | Recipe

Greetings to all! I am pleased to share with you today a spectacular recipe, easy to prepare and ideal for sharing with the family. I'm talking about vegan cheese that I prepared with chickpeas and flavored with 2 of my favorite spices basil and oregano. The result was a delight.

Ingredients:

250 grams of chickpeas
1 tablespoon of dried and ground basil
1 tablespoon of dried and ground oregano
Salt to taste
1.75 milliliters of water

Chickpeas are a vegetable protein considered a great source of fiber, contain minerals such as iron, potassium, phosphorus, magnesium and zinc. In addition to vitamins B, C, E and K, folic acid, so they help to promote intestinal transit, have a high energy value, are diuretic and its low sodium content allows to be included in diets to control hypertension.

Preparation:

-First we take a cup of chickpeas and put it in a processor to grind and make chickpea flour.

-In a pot, put 1 and a half cups of chickpea flour.

-Add the water and leave covered for 8 hours. This process allows the fermentation of the chickpea flour.

-Once the indicated time has elapsed, we proceed to extract the liquid, trying not to stir the flour at the bottom. With the help of a ladle we remove 750 milliliters of water.

-In a saucepan, heat a tablespoon of olive oil. And add the liquid left in the flour mixture without touching the bottom.

-Add the basil, oregano and salt and stir. Let it cook until it boils.

-When it starts to boil, add the flour and stir constantly so that the mixture does not stick to the pot.

-When dry, put in a container that serves as a mold, a clean and dry cloth, I used a thin anticeptic cloth so that the air passes through the fabric, pour the mixture and cover.

-Let stand covered for 6 hours, until the mixture hardens and remove from the mold.

We serve it to accompany our meals and this is where everyone says: I can't believe it's not cheese !!!!
