Caprese chicken / Delicious and fast recipe

Sometimes you don't have to spend much time in the kitchen to eat healthy and delicious. I love grilled chicken because it's an easy and healthy option.

If you are looking for a recipe to prepare juicy chicken in just a few minutes, this recipe is a great option!

One of the vegetables that are never missing at home is the tomato. We feel a predilection for this food. Whenever the time of the year allows it, it is a vegetable that is part of my different meals. When there is an abundance of this vegetable, I prepare Neapolitan sauce, so I have this delicious sauce in winter. But in summertime we enjoy fresh tomatoes in salads.

As good Italian descendants, basil is one of the aromatic herbs that is also present in my shopping. However, this vegetable wilts quickly so one way to enjoy it in the long run is to make pesto sauce and store it in jars in the refrigerator. Why am I telling you this? This account is to tell you that with these ingredients, I commonly prepare caprese salad, these are flavors that can be combined with chicken to give it a different touch and break the monotony.

The traditional caprese salad is made with buffalo cheese, but a variation may be to use mozzarella cheese. This type of cheese, when subjected to high temperatures, melts easily providing moisture to the preparation. So this ingredient will be key to make a juicy chicken.

To prepare this recipe, you need:

4 Boneless chicken breasts
1/4 pound mozzarella cheese
2 fresh tomatoes
2 tablespoons pesto sauce
vegetable oil
salt and pepper to taste

Make a side cut in the chicken breasts, so you can obtain a thin fillet that is easy to cook.

Preheat oil in a non-stick pan and brown the chicken breasts. Season to taste with salt and pepper.

When both sides of the chicken breasts are brown, place slices of mozzarella cheese on the breasts and then slices of tomato. Lower the heat, cover, and let cook for a couple of minutes.

To make pesto sauce, you need to wash the leaves well and discard the thick stems. Dry the leaves well and grind them in a blender with a clove of garlic, a dash of olive oil, salt, and a tablespoon of pine nuts or walnuts. You can make this sauce in advance and store it in the refrigerator. If you do it this way, you will not invest so much time in making this delicious chicken Caprese.

Once the chicken breasts are cooked, you can bathe them with a few pesto sauce.

To achieve the characteristic flavor of Caprese salad, this recipe lacks the star ingredient: basil. However, when this herb is cooked, its aroma diminishes, and its flavor becomes bitter. To avoid this we will use basil in the form of pesto sauce.

You can also add it to pasta. I wanted to accompany this recipe with fusilli al pesto. So while, I was preparing the chicken breasts, I boiled some water and cooked some pasta. When I strained it well, I mixed it with some pesto sauce.

This way, basil can be appreciated but does not overpower the flavors of the chicken, tomato, and mozzarella cheese.

How long did it take me to prepare this meal? This delicacy took me only 15 minutes to prepare. Great? As you can see, this is a healthy and quick recipe to prepare. If you are up for it you can also make it at home.
