As a homemaker, Sundays hold a special place in my heart. It’s the day I indulge in some creativity in the kitchen, exploring new flavors and bringing something special to the dinner table. Last Sunday, I decided to make Makhana Kheer, a delightful Indian dessert that is both healthy and delicious. Here’s how I prepared it:

Ingredients:

1 cup makhana (fox nuts)

1 tsp ghee

1/2 kg milk

1/2 cup sugar

2 green cardamom

A handful of dry fruits (almonds, cashews, raisins), chopped

Method:
Roasting the Makhana:
Start by heating 1 tsp of ghee in a pan. Add the makhanas and roast them until they turn crispy and golden. Let them cool slightly and then grind them coarsely in a grinder.

Preparing the Dry Fruits:
Chop almonds, cashews, and raisins and keep them aside. These will add a crunchy texture and richness to the kheer.

Boiling the Milk:
In a heavy-bottomed pan, heat 1 tablespoon of ghee and add green cardamom to release its aroma. Then pour in 1/2 liter of milk and bring it to a boil. Lower the flame and let it simmer, stirring occasionally to prevent it from sticking to the bottom.

Adding Sugar:
Once the milk has thickened slightly, add 1/2 cup of sugar and stir well until the sugar dissolves completely.


Add the chopped dry fruits and cook for another 2-3 minutes.

Cooking the Makhana:
Add the coarsely ground makhanas to the milk and let them cook on a low flame. As the makhanas absorb the milk, the kheer will thicken.

The kheer is ready when it reaches a creamy consistency.

Serving:

You can serve Makhana Kheer warm or chilled, depending on your preference. Both versions taste equally delicious.

Last Sunday, this kheer was the highlight of our dinner’s dessert. The creamy texture of milk, the nutty flavor of roasted makhanas, and the crunch of dry fruits made it an instant hit with my family.
