Atún en salsa negra/Tuna in black sauce
El atún es uno de los pescados que más me gusta tanto por su sabor definido como por lo práctico que es para prepararlo: se limpia de manera fácil, tiene poca espina y es combinable con muchos ingredientes lo que permite una amplia gama de recetas.
Por lo general lo hago guisado ya que de esa forma es muy rendidor y puedes comerlo con verduras, pastas o arroz, a veces lo preparo sancochado con especias, lo desmecho y lo tengo disponible para preparar ensaladas, en ocasiones me apetece el trozo completo.
Esta semana, fue una de esas ocasiones que cuando saque el trozo del congelador quería hacer algo distinto y sabroso con él, por supuesto que era un momento perfecto para pensar en un post para @hivefood, así que me dispuse a buscar una receta distintas a las conocidas por mí.
Me encontré una receta que llevaba la combinación de ajonjolí negro y blanco, como tenía ambos ingredientes me decidí por esta preparación, otros ingredientes no los tenía por lo que le di mi toque personal al plato y la verdad es que, modestia aparte, quedó espectacular.
Hoy les comparto la receta y te invito a que lo prepares, vas a quedar encantado. Acompáñame en la preparación:
Ingredientes
½ kilo de atún
1 cucharada copetona de ajonjolí negro
1 cucharada copetona de ajonjolí blanco
1 cebolla pequeña
1 cucharada de jugo de limón
1 cucharadita de ajo triturado
2 cucharadas de aceite
2 cucharadas de salsa de soya
2 cucharadas de agua
4 papas medianas
1 ramita de perejil
Sal al gusto.
Procedimiento
1.- Lavamos y limpiamos muy bien el trozo de atún, cuidando que no se parta, para ello lo más conveniente es hacerlo antes de que se descongele completamente. Cortamos en dos trozos y retiramos la parte oscura.
2.- Ahora cortamos cada trozo longitudinalmente para que nos queden los cuatro medallones. Si el atún está totalmente descongelado para que no se deshaga lo mejor es apretarlo como si vas a exprimirlo y con un cuchillo de buen filo vamos cortando.
3.- Mezclamos 1 cucharada de salsa de soya con el jugo de limón y una pequeña cantidad de sal.
4.- Con esta mezcla sazonamos los medallones y los dejamos marinar por media hora en la nevera.
5.- Lavamos, pelamos y cortamos las papas, llevándolas al fuego para salcocharlas, cuando estén blandas, reservamos.
6.- Picamos la cebolla finamente y trituramos los ajos.
7.- En un caldero o sartén agregamos las dos cucharadas de aceite y sofreímos a fuego medio la cebolla y el ajo.
8.- En un plato mezclamos el ajonjolí y rebosamos los medallones de atún.
9.- Cuando la cebolla y el ajo estén transparentes agregamos la cucharada restante de soya, dejamos cocinar unos segundos y le agregamos el agua.
10.- Incorporamos los medallones y los dejamos dorar por un lado, aproximadamente 2 minutos, los volteamos y dejamos cocinar por 2 o tres minutos más.
11.- ¡Listo! Ya Tenemos nuestro exquisito Atún en Salsa Negra. Lo servimos acompañado con las papas al vapor decoradas con perejil picadito. ¡Buen Provecho!

This week, it was one of those occasions that when I took the piece out of the freezer I wanted to do something different and tasty with it, of course it was a perfect time to think of a post for @hivefood, so I set out to find a recipe different from those known to me.
I found a recipe that had the combination of black and white sesame, as I had both ingredients I decided for this preparation, other ingredients I did not have so I gave my personal touch to the dish and the truth is that, modesty aside, it was spectacular.
Today I share the recipe with you and I invite you to prepare it, you will be delighted. Join me in the preparation:
Ingredients
½ kilo of tuna
1 tablespoonful of black sesame seeds
1 tablespoon of white sesame seeds
1 small onion
1 tablespoon of lemon juice
1 teaspoon of crushed garlic
2 tablespoons oil
2 tablespoons soy sauce
2 tablespoons water
4 medium potatoes
1 sprig of parsley
Salt to taste.
Procedure
1.- Wash and clean the piece of tuna very well, taking care that it does not break, for this it is best to do it before it is completely thawed. Cut in two pieces and remove the dark part.
2.- Now cut each piece lengthwise so that we have four medallions. If the tuna is completely thawed so that it does not fall apart, it is best to squeeze it as if you were going to squeeze it and with a sharp knife cut it into four medallions.
3.- Mix 1 tablespoon of soy sauce with the lemon juice and a small amount of salt.
4.- Season the medallions with this mixture and let them marinate for half an hour in the refrigerator.
5.- Wash, peel and cut the potatoes, taking them to the fire to sauté them, when they are soft, reserve.
6.- Chop the onion finely and crush the garlic.
7.- In a pot or frying pan add the two tablespoons of oil and fry the onion and garlic over medium heat.
8.- In a plate we mix the sesame seeds and we overflow the tuna medallions.
9.- When the onion and garlic are transparent, add the remaining tablespoon of soy, let it cook for a few seconds and add the water.
10.- Add the medallions and let them brown on one side, approximately 2 minutes, turn them over and let them cook for 2 or three more minutes.
11.- Ready! Now we have our delicious Tuna in Black Sauce. Serve it with the steamed potatoes garnished with chopped parsley. Enjoy!
