Figs are an exquisite and pulpy fruit that grows more easily in cold and humid climates. In the city where I live it is not common to see a fig tree loaded with figs, so I was very surprised to find these figs.

I recently changed supermarkets and in the new one I have been pleasantly surprised because it has better prices than the one I used to go to regularly and also because I have found fruit and other products that I had not seen for a long time.

Figs are one of them and as soon as I saw them I did not hesitate to buy them to prepare a good sweet Creole green figs. The fruit as such has its sweet versatility, however, in its natural form, well ripe it has a sweet-acid flavor and a soft texture that is very tasty.

In terms of confectionery, green figs are used to prepare: figs in syrup, figs filled with dulce de leche and tartlets filled with fig jam and decorated with fig slices also in syrup.

Of all these versions, the only one I know how to prepare is the fig jam in syrup. The truth is that it takes some work but its unique and exquisite flavor is a real treat for the palate. So I invite you to prepare it so you can enjoy this delicacy. Creole.

Ingredients

higos 2.JPG

1 kg of green figs
1 kg of sugar
2 lt of water.

Procedure

1.- The fig is covered by a fuzz that cannot be felt, so it is necessary to clean it very well, the best way to do this is to use a piece of water sandpaper of soft grain, it can be 360.

2.- Rub strongly with the sandpaper the whole surface of the fig, once finished this process wash them very well.

3.- Now proceed to remove the tip and at the other end, with the knife, make a cut in the shape of a cross.

4.- Once this procedure is finished, rinse them very well and in a pot with water that covers them we take them to high heat for 5 minutes.

5.- After this time we take them down from the fire, rinse them very well under the jet and repeat this step, that is to say, we take them again to the fire until it boils and we leave them there for five more minutes or until when pricking them with a needle it pierces them easily.

6.- Once the time has elapsed and the needle test has been done, we rinse them again under the jet and let them cool down so they can be handled.

7.- While we wait we take a large pot to high heat, add the two liters of water and the sugar, with a paddle we stir until the sugar dissolves.

8.- Once the figs are at a temperature where we can handle them, we squeeze them gently, taking care not to deform them.

higos 10.JPG

9.- When we finish squeezing them we add them to the mixture of water and sugar. We let it boil, keeping it on high heat for half an hour.

10.- After this time we take it to low heat and leave it for approximately two and a half hours or until a thick syrup is formed. While this is happening, stir it frequently.

higos 12.JPG

11.- Ready! We have our delicious sweet to pamper our palate.

higos 13.JPG

12.- We can serve it alone or with crackers and soft cheese. ¡Bon Appetit!
