{SPN\ENG} Tortitas con calabacín \ Pancakes with zucchini

¡Hola a todos en esta comunidad! Hoy he decidido mostraros una idea diferente de tortitas saladas con calabacín. El verano es la temporada del calabacín en Bulgaria. Son un producto excepcional con el que se puede experimentar constantemente. A todos nos gusta comerlos. Ya sea frito o al horno, me encanta el calabacín. Y esta es una receta muy interesante y una gran idea para diversificar tu menú de verano. Además, si esperas invitados, puedes servirlos cortados en aros como aperitivo. No son para nada difíciles de preparar, resultan bajas en calorías gracias al calabacín y al mismo tiempo son tan tan deliciosas. No has comido tortitas más deliciosas.

Productos necesarios:

  • 2 calabacines medianos
  • 2 huevos
  • 300 ml de leche de vaca fresca
  • 1 paquete de levadura en polvo (10 g)
  • 250 g de harina
  • sal al gusto
  • aceite o aceite de oliva para freír

Relleno opcional puedes usar algo a tu gusto. A mí me gustan con queso crema pero también son buenas combinaciones con queso blanco salado ricotta o incluso con jamón u otro embutido.

En primer lugar, ralla finamente el calabacín, salpimiéntalo y déjalo escurrir durante 30 minutos o más.

Mientras tanto, mezclar la leche en polvo con los huevos y remover. Puedes con un batidor de alambre o batidora lo que tengas a mano.

Tamizar la harina con la levadura en polvo y añadirla cucharada a cucharada a los huevos, removiendo constantemente.

Por último, añadir el calabacín bien escurrido y mezclar bien hasta obtener una mezcla espesa de panqueques.

Freír las tortitas de la forma habitual. Calentar una sartén con un poco de aceite o aceite de oliva. Vierta un cucharón de la mezcla y extienda con una cuchara hasta que se convierta en una tortita. Cuando esté listo dar la vuelta con una espátula.

Cuando estén listos los dejo enfriar bien. Generalmente me gusta untarlos con queso crema de hierbas y enrollarlos. Puedes enrollarlos con un relleno a tu gusto.

They are an exceptional product that you can experiment with all the time. We all love to eat them. I love zucchini, whether fried or baked. And this is a very interesting recipe and a great idea to diversify your summer menu. Plus, if you're expecting guests, you can serve them sliced as an appetizer. They are not difficult to prepare, they are low in calories thanks to the zucchini and at the same time they are so delicious. You haven't eaten more delicious pancakes.

Ingredients:

  • 2 medium zucchini
  • 2 eggs
  • 300 ml fresh cow's milk
  • 1 packet baking powder (10 g)
  • 250 g flour
  • salt to taste
  • oil or olive oil for frying

Optionally you can use whatever filling you like. I like them with cream cheese, but they are also good with salty white ricotta cheese or even ham or other sausage.

First, grate the zucchini finely, season with salt and pepper and let it drain for 30 minutes or more.

In the meantime, mix the dry milk with the eggs and stir. You can use a wire whisk or whatever blender you have on hand.

Sift the flour with the baking powder and add it spoon by spoon to the eggs, stirring constantly.

Finally, add the well drained zucchini and mix well until you have a thick pancake mixture.

Fry the pancakes in the usual way. Heat a frying pan with a little oil or olive oil. Pour a ladle of the mixture and spread it with a spoon until it becomes a pancake. When it turns golden brown, flip it with a spatula.

When they are done, let them cool well. I usually like to spread them with herb cream cheese and roll them up. You can roll them up with a filling of your choice.

Cuando leí calabacin me dije "esta receta es para mi!". Me encanta el calabacion, lo preparo de muchas maneras pero de ésta forma jamás lo había hecho y definitivamente me has tentado y ahora tengo que hacerlo jeje

The end product looks yummy, but, as you said:

I could do with some sausage or even better some bacon in there 🤤
