Pumpkin Lodeh with eggs

Hello foodies lovers! Have you ever heard of sayur lodeh before? Sayur Lodeh is vegetables cooked in coconut milk. Sayur Lodeh usually uses several types of vegetables cooked together. But this time I want to share a different recipe for sayur lodeh. I had leftover pumpkin in the fridge then I had the idea to make sayur Lodeh. This is one of my favorite dishes as a child. Usually when making sayur lodeh pumpkin, I will add long beans but I didn't have any stock in the fridge. Therefore I took the initiative to replace it with eggs.Actually, I have never put eggs in vegetable lodeh, but it turned out delicious. It is not as delicious as mixing pumpkin with long beans, but it is also quite good because the important thing is that the broth tastes good. This vegetable lodeh not only tastes good, but also has a very appetizing aroma. You can try this recipe at home if you have pumpkin. I guarantee you will like it.

The Ingredients

  • 300 grams pumpkin
  • 130 ml coconut cream
  • 3 garlics
  • 8 Shallots
  • 2 Candlenut
  • 1/2 tablespoon salt
  • 50 grams brown sugar
  • 1/2 teaspoon flavoring
  • 500 grams water
  • 1/4 kilogram eggs
  • 3cm galangal
  • 2 bay leaf

How to cook it?

  • Boil the eggs first then cool and peel.

  • Cut the pumpkin according to taste. Then wash the pumpkin.

  • Peel the shallots and garlic then blend with the candlenuts.

  • Heat water in a pan then add the washed pumpkin.

  • Add the ground spices,galangal,Bay leaf, eggs. Add salt, brown sugar and flavoring and stir well.

  • Add coconut milk and stir until the coconut milk is cooked.Make sure the coconut milk is really cooked so it doesn't spoil easily.

  • Serve in a bowl and the dish is ready to eat.

Never heard of it, its my first time seeing this and it looks good. We also cook a similar veggie to pumpkin, called Kalabasa or Squash. We also cook it in different kind of vegetables like bitter gourd, eggplant, okra, string beans and coconut milk. It taste good too. 🤤✨😻

It's the first time o heard sayur loder , well I bet with veggies it's good too but surely wvgs give to it more flavoured, the dish looks super good and traditional 🤩🤩
