Anywhere there is food, you can count on my presence. Food holds a special place in my heart. Whenever I am stressed, angry, or sad, the mere sight of good food immediately uplifts my spirit because I get excited, so it is safe to say the easiest way to my heart is through food.


My colleagues at work always make fun of me for always carrying food to work along with snacks to munch on during the day. They claim that I can't ever forget my lunch bag at home, and I automatically become cranky anytime I'm hungry.


My love for food and growing up in a household that enjoys trying out different delicacies from different parts of the country inspired me to always want to try out new recipes. It's funny since I almost never take pictures when I try new recipes because I'm too excited to remember to take pictures.

I also like to occasionally go out to eat, especially when I am financially buoyant. And sometimes I get surprised food packages delivered to me at home. I look forward to travelling around the world and trying out different delicacies someday.


Recently, I had to resume baking cookies for my personal consumption since the increase in the rice of my favourite cookies, "Maryland cookies." It's actually fun doing that because I get to also sell some of the cookies.



Gwote

Among the many delicacies and the recipes I've tried, only a few of these delicacies really hold a special place in my heart, and one of such delicacies is GWOTE, a traditional delicacy from Plateau State. It is one of the easiest foods to make and also has lots of health benefits.


I would love to share the recipe with you. Gwote is prepared using acha (fonio), which is a type of cereal, and vegetables as the main ingredients.


Ingredients

*Acha (Fonio, hungry rice)
*Brisket bone and beef, or alternatively chicken
*Spinach
*Sorrel leaves (Yakuwa)
*Cabbage
*Carrots (optional)
*Garden egg
*Tomatoes
*Pepper
*Spring onion and onion
*Ginger and garlic (optional)
*Seasoning


The ingredients listed above are the main ingredients, but unfortunately I couldn't get sorrel leaves, garden eggs, brisket bone, or beef in my current location.



Procedure

First, you have to wash all ingredients that require washing, such as the chicken and vegetables.
Place your chicken in a clean pot along with some chopped onions, your curry and thyme, Maggi, and salt, and boil.


Add your chopped tomatoes and blended pepper with ginger and garlic to the chicken stock and allow it to boil for a few minutes, then add more spices and seasonings.


While you wait for it to boil, quickly wash your acha (fonio) to remove any sand particles. Then add your acha, and using a wooden spatula, keep stirring gently at intervals. This is to avoid forming lumps and also ensure it does not stick to the bottom of the pot and burn until it is thick.


Once it becomes thick, add your spring onions and sliced onions and stir for at least 2 minutes.


Then add your neatly sliced carrots and stir. Allow it to sit for at least one minute.


Add your spinach and cabbage last and give it a good stir, and then allow it to cook on very low heat for at least 3–5 minutes. You can add a little hot water if it's too thick. Then turn off the heat and serve.


A little fun fact about me is that I eat without having to worry about having a big stomach or adding so much weight that my clothes would not fit me. Despite my love for cooked food and junk food, I still maintain my petite stature with a flat stomach, making people around me wonder what the secret could be.
