This weekend, I visited the home of one of my wife's cousins. In the large backyard, there was a cocoa tree absolutely full of ripe pods. According to her husband, hardly anyone bothers to harvest the cocoa growing there. So, I grabbed a bag and picked a few pods straight from the tree.
My goal is to make my own chocolate. Nowadays, many products sold as chocolate contain less and less cocoa and more sugar, fats, and other ingredients. I decided to experience the entire process, starting with the raw material itself.
The first step is to open the cocoa pods and remove the beans. After that, I removed the pulp surrounding each bean and placed them in a container. The beans will now ferment for about four days, an essential step in developing the rich aroma and flavor that make chocolate so special.
Once the fermentation is complete, they will be dried under the sun. Only then will the roasting process begin, followed by the transformation of the cocoa beans into chocolate.
I'm really excited to see the final result. If everything goes as planned, I'll be sharing the next steps of this homemade chocolate-making journey, from cocoa pod to chocolate bar.

Neste final de semana passei na casa de uma prima da minha esposa. No enorme quintal da propriedade havia um pé de cacau completamente carregado de frutos. Segundo o marido dela, praticamente ninguém aproveita os cacaus que nascem por lá. Então, peguei uma bolsa e colhi alguns diretamente do pé.
O objetivo é produzir meu próprio chocolate. Hoje em dia, muitos produtos vendidos como chocolate nas lojas possuem cada vez menos cacau e mais açúcar, gorduras e outros ingredientes. Resolvi experimentar todo o processo, começando pela matéria-prima.
A primeira etapa é abrir os frutos e retirar as sementes. Depois disso, removi a polpa que envolve cada uma delas e coloquei tudo em uma vasilha. Agora as sementes ficarão fermentando por aproximadamente quatro dias, uma etapa essencial para desenvolver o aroma e o sabor característicos do chocolate.
Após a fermentação, elas serão levadas ao sol para secar. Só então começará a etapa de torra e transformação das sementes em chocolate.
Estou bastante curioso para ver o resultado. Se tudo der certo, pretendo compartilhar aqui as próximas etapas dessa experiência de produzir chocolate artesanal, desde o fruto até a barra.
