Convenience (fast) food: easy and homemade

This is what a meal "out" of a jar can look like. Remember the jars of yellow cauliflower curry that I made for Saturday's market that was almost blown away?

The remaining two became Monday's meatfree meal after I returned from a mandatory annual general meeting.

To make/assemble: set the rice to cook. It takes 25 minutes. While that is cooking, gently lift the garnish (which isn't - the red onion and fresh cilantro are essential to the dish) out and set aside. Either decant the curry into a pot and warm on the stove, or bung the in the jars into the microwave and warm through.

While that's going on, prepare the sambals: chopped tomato and onion, finely chopped dhanya (cilantro), a dash of apple cider vinegar and, if liked, a drizzle of honey or sprinkling of cane sugar.

To serve, once the rice is cooked, put rice into the base of the bowl, tip the curry on top and top off with the red onion and cilantro that you set aside.

Instant supper out of a jar.

I will be making this again. And again. One of these days, life will let me get the recipe on to the blog!

      Thank you. As does your broth! I make my own chicken stock (what we call broth) all the time. Makes the only chicken soup I'll eat... Oh dear that makes me sound like a bit of a snob. I really do need to try making ramen...
