Day 1. Week 1. Of 52

For 2022's first meatfree Monday and the first day back at the other job, it was burger night. The best plant-based burger recipe from my friend, Nina's recipe book. Thank goodness they freeze well. Served on sourdough buns (also ex the deepfreeze) and with wedges.

Rounded off for total comfort with tomato sauce/ketchup.

Work day 1 of week 1 of 52. Done.

Nothing earthshattering to report other than: confessing that I worked from the couch my weekend office and with half an eye on the cricket and still managed to get the entire to do list checked off.

What a brilliant way to go on a Monday :) I think we needed to have more veggies too coz we have been consuming a lot of meat during the holidays :)

Actually, we eat a whole lot less meat than we used to and years ago I tried alternating meat with veg days. Now that is mostly how we do it. I do, though, religiously try to do meatfree Mondays

Actually for us, it's a compromise between someone who's a wannabe vegetarian and a dedicated carnivore! lol
