A Witch in the Kitchen: "Chicken Stew with Colombian Potatoes and Olives" [EN // Una Bruja en la Cocina: "Pollo Guisado con Papas Colombianas y Aceitunas" [ES]

Preparing stews has become one of my specialties, and I really love doing it, because stews are preparations that accept practically all types of vegetables, even when they include animal protein in their ingredients. One of the ones I love the most is stewed chicken, tubers and vegetables go great, and even fruits, is that chicken is one of the meats that best suits all kinds of flavors.



The chicken stew with potatoes and carrots is practically a classic, however this time I wanted to change the normal potatoes for some Colombian potatoes or Colombian chips, which are very small and their texture and flavor is really delicious, they are fast cooking so they were perfect for this preparation, because I did not have much time available to prepare lunch. I also added some nice olives with seeds to add a different touch of flavor, the result was great.



By using boneless chicken we minimize the cooking time by almost half, which is ideal for when we do not have much free time, so this recipe will be marked as one of my favorites, if you want to know how to prepare it, come with me and I will tell you. Enjoy!

Ingredients

  • 800 gr of boneless chicken thighs and cut to taste.
  • 400 grams of Colombian potatoes.
  • 2 cups of processed ripe tomatoes.
  • 2 finely chopped medium onions.
  • 1 large paprika, finely chopped
  • 1/2 cup of olives with seeds.
  • 1 medium carrot cut into cubes.
  • 1/4 cup of garlic pot.
  • 1 tablespoon of finely chopped celery.
  • 1 tablespoon of sugar.
  • 2 tablespoons of soybean oil.
  • 1/2 cup of milk.
  • 1 tablespoon of salt.
  • 1/2 tbsp of ground cumin.
  • 1/8 tsp of ground black pepper.
  • 1/8 tsp of spicy paprika.
  • 1/4 tsp of turmeric powder. l>

    Preparation

    • Preparation Time: 15 Minutes.
    • Cooking time: 40 Minutes.

    We begin by seasoning the chicken and leave it to marinate for at least 15 minutes, for which we add the seasoning and half a cup of milk, stir and set aside. After 15 minutes in a hot pot we spread the sugar and add the oil to let it caramelize, and then add the chicken to brown it on both sides.



    Once the chicken is golden, add the chopped onions, stir and let it crystallize, then add the paprika with the garlic and chopped celery.



    Continue adding the chopped carrot and olives, also add the liquid where we marinated the chicken, there are all the flavors of the condiments and then add the processed tomato, let it cook over high heat for about 15 minutes.



    After this time we will add the Colombian potatoes, and we will let it cook covered and at low fire for about 15 or 20 minutes at most, we will turn off and let it rest covered for about 15 minutes before serving. These potatoes should be cooked for a maximum of 20 minutes and over low heat so they don't fall apart.



    The combination of sweet flavors, by the carrot and the touch of caramelized sugar, the flavor of the olives and the spicy touch of the paprika, is really delicious, the potatoes go great because they absorb all these flavors, giving us a little bombs of flavor in this delicious recipe. Accompanied with a good rice and a delicious salad, it is surely a perfect lunch. <br<

    Preparar guisos se ha vuelto una de mis especialidades, y es que realmente me encanta hacerlo, pues los guisos son preparaciones que aceptan prácticamente todo tipo de vegetales, aun cuando este incluya proteína animal en sus ingredientes. Uno de los que amo más es el pollo guisado, tubérculos y vegetales le van genial, e incluso frutas, es que el pollo es una de las carnes que mejor se adapta a todo tipo de sabores.



    El pollo guisado con papas y zanahoria es prácticamente un clásico, sin embargo, esta vez quise cambiar las papas normales por unas papas colombianas o papitas colombianas, que son muy pequeñas y su textura y sabor es realmente deliciosa, son de cocción rápida aso que le iban perfecto a esta preparación, pues no tenía mucho tiempo disponible para preparar el almuerzo. Además, le adicione unas ricas aceitunas con semilla para agregarle un toque diferente de sabor, el resultado fue genial.



    Utilizando pollo deshuesado minimizamos el tiempo de cocción casi a la mitad del tiempo, lo cual es ideal para cuando no disponemos de mucho tiempo libre, por lo que esta receta quedara marcada como una de mis favoritas, si quieres saber cómo la prepare, acompáñame y te cuento. ¡Disfruten!

    Ingredientes

    • 800 gr de muslos de pollo deshuesados y cortados a gusto.
    • 400 gr de papas colombianas.
    • 2 Tazas de tomate maduro procesado.
    • 2 Cebollas medianas finamente picadas.
    • 1 Pimentón grande finamente picado.
    • 1/2 Taza de aceitunas con semilla.
    • 1 Zanahoria mediana cortada en cubos.
    • 1/4 Taza de ajo porro.
    • 1 Cda de apio finamente picado.
    • 1 Cda de azúcar.
    • 2 Cdas de aceite de soya.
    • 1/2 Taza de leche.
    • 1 Cda de sal.
    • 1/2 Cda de comino molido.
    • 1/8 Cdta de pimienta negra molida.
    • 1/8 Cdta de paprika picante.
    • 1/4 Cdta de cúrcuma en polvo. l>

      Preparación

      • Tiempo de Preparación: 15 Minutos.
      • Tiempo de Cocción: 40 Minutos.

      Comenzamos condimentando el pollo y dejarlo marinando al menos unos 15 minutos, para lo cual le agregaremos los condimentos y la media taza de leche, revolvemos y reservamos. Pasados los 15 minutos en una olla caliente esparcimos el azúcar y agregamos el aceite para dejar que caramelice, y luego agregar el pollo para dorarlo por ambos lados.



      Una vez dorado el pollo, agregamos las cebollas picaditas, revolvemos y dejamos cristalizar, para agregar luego el pimentón con el ajo porro y el apio picadito.



      Continuaremos agregando la zanahoria picada y las aceitunas, además adicionamos el líquido en donde marinamos el pollo, allí están todos los sabores de los condimentos y seguido adicionamos el tomate procesado, dejamos cocinar a fuego alto por unos 15 minutos.



      Pasado este tiempo agregaremos las papitas colombianas, y dejaremos cocinar tapado y a fuego bajo por unos 15 o 20 minutos como máximo, apagamos y dejamos reposar tapado por unos 15 minutos antes de servir. Estas papas deben cocinarse como máximo 20 minutos y a fuego bajo para que no se deshagan.



      La combinación de sabores dulces, por la zanahoria y el toque de azúcar caramelizada, el sabor de las aceitunas y el toque picante de la paprika, es realmente delicioso, las papas le van genial pues absorben todos estos sabores, regalándonos así unas pequeñas bombas de sabor en esta deliciosa receta. Acompañado con un buen arroz y una deliciosa ensalada, seguramente es un almuerzo perfecto. <br<
