🍣 Sushi day. Class notes | Dia de sushi. Notas de clase 🍣
Hola amigos de Hive! Este fin de semana estuve en un taller de sushi y aquí les voy a dejar mis anotaciones.✍️🍣
😅Quiero aclarar que el sushi en cada país sufre sus variaciones para adaptarse paladar de cada país, así que este en específico es el sushi que se come en mi país. Puede que tenga ingredientes que no tenga el tradicional.😅
Primero que todo el famoso ✨Mise en place✨ que hace las preparaciones un poco más ordenadas y fluidas.
Arroz 🍚
El arroz es el típico de sushi, se lava muy bien de 3 a 6 veces, estrujandolo para que salgan muy bien los almidones, se cuela para que el agua salga completamente.
Luego en la misma proporción de arroz y agua se cocina preferiblemente en olla arrocera y ya cocido se deja reposar sin destapar unos 25min. Pasado este tiempo el arroz se deja reposar hasta que alcance temperatura ambiente en un envase de plástico que no sea muy ancho.

Misura🍵
Se prepara 150g de Misura por cada kilo de arroz, la Misura es la mezcla de 50% azúcar y 50% vinagre. Para lograr diluir completamente el azúcar se puede poner al calor no más de 60°C (la idea es que esta preparación no caliente mucho o le puede dar un sabor muy agrio)
Bueno aquí en la Misura es donde cada quien le pone el toque propio (el toque de este restaurante en específico es agregar con glutamato, sal y unas emulsiones que son su secreto de la casa)
Al probar está Misura el sabor es como a una fruta avinagrada
Queso crema
Se usa casi a temperatura casi ambiente y se pone en una manga pastelera para que sea más fácil de manejar.
Las salsas
Salsa Siracha. Lleva 200g de mayonesa y 5g de siracha
Salsa Anguila. Una preparación de la casa con vino blanco, soya, azúcar y anguila. Cocido de hora a hora y media.
Salsa dinamita. Lleva 200 mayonesa, 4 palitos de cangrejo, 20g wakame, 20g de masago y un poco de salsa de sésamo.
Otros Rellenos 🥑
Esto es al gusto. Aquí usaron aguacate, pepino, wakame, masago y kanikama.
Tempura
Personalmente amo los rolls tempura por lo crocante.
La parte húmeda es una mezcla de 500ml de agua y 350g de harina (y por supuesto si quieres un poco más de sabor con azúcar, salsa de anguila, aceite de sésamo y glutamato monosódico). La parte seca es panko (con el pan rallado es difícil controlar los sabores así que el panko es lo mejor).
Proteína🍣
Lo mejor para el final el salmón ahumado, aquí nos mostraron una técnica de ahumador al frio casero
En el ahumador puso una cantidad incontable de especias pero explica que puedes agregar lo que quieras conseguir en sabor o lo que tengas en casa
El proceso es muy delicado para mantener el pescado crudo. Pero el resultado es una explosión de sabor. El pescado sigue crudo y congelado pero con un sabor que hace totalmente la diferencia.
Armado 🍱
Saliendo de todo el misanplas sigue el armado, aquí partimos de Uramaki (arroz por fuera) y Futomaki (arroz por dentro).
A la hora de armar las líneas guías del alga tienen un sentido y se pone en el mismo sentido que el de los palillos del makisu.
Rellenar y enrollar es un tema que tienes que practicar hasta lograr y te lo dejo en este gif.
La tempura es con el futomaki y se pasa primero por la parte húmeda, luego por el panco y finalizar con la fritura a 200°C.
Para el corte el cuchillo es recomendable que sea de 10 pulgadas y una hoja muy fina. El corte es con desplace y no con fuerza porque se aplastaría el roll.
Esta experiencia fue gracias a una invitación que me hizo una amiga y me encanto participar. Practicamos nuestros rolls y aunque me falta un poco de practica quedaron muy bien.
Siempre había pensado que el sushi es un poco caro para los ingredientes que se usan. Pero este día entendí que más que los ingredientes es el tiempo y trabajo que toma hacerlo, son muchos años de práctica los que tiene este chef para domar su técnica y los hace muy rápido y casi con los ojos cerrados. Eso y la atención que le ponen a cada ingrediente hacen que el precio sea muy lógico.

Tempura
I personally love tempura rolls because of how crunchy they are.
The wet part is a mixture of 500ml water and 350g flour (and of course if you want a little more flavor with sugar, eel sauce, sesame oil and MSG). The dry part is panko (with breadcrumbs it is difficult to control the flavors so panko is best).
Protein🍣
The best for last is the smoked salmon, here they showed us a homemade cold smoker technique
He put a countless amount of spices in the smoker but explains that you can add whatever you want to achieve in flavor or whatever you have at home.
The process is very delicate to keep the fish raw. But the result is an explosion of flavor. The fish is still raw and frozen but with a flavor that makes a total difference.
Armed 🍱
Leaving out all the misanplas, the assembly continues, here we start from Uramaki (rice on the outside) and Futomaki (rice on the inside).
When assembling the seaweed guide lines have a direction and are placed in the same direction as the makisu chopsticks.
Filling and rolling is a topic that you have to practice until you achieve it and I'll leave it to you in this gif.
The tempura is with the futomaki and is passed first through the wet part, then through the panco and finishes with frying at 200°C.
For cutting, it is recommended that the knife be 10 inches long and have a very thin blade. The cut is done with movement and not with force because the roll would be crushed.
This experience was thanks to an invitation from a friend and I loved participating. We practiced our rolls and although I need a little practice, they turned out very well.
I had always thought that sushi is a little expensive for the ingredients used. But this day I understood that more than the ingredients it is the time and work it takes to make them, there are many years of practice that this chef has to master his technique and he makes them very quickly and almost with his eyes closed. That and the attention they pay to each ingredient make the price very logical.
