Traditional Dish of festival - Gujiya

Hello friends, how are you all, Wishing you all happy and prosperous life ahead.

Today I would like to share India's traditional sweet dish. Gujiyas are sweet dumplings made all purpose flour and filled with a delightful khoya and dry fruits mixture, crispy and flaky outer layer,sweet and soft inside. It us popularly made in every part of India during festival like holi. As you all know that it was Holi two days ago in India, so Gujiya must have been made in every house, I had just made Gujiya in my way, everybody has their own way of making with different stuffing.

The Ingredients

โ€ข 100 gms Khoya (condensed milk)

โ€ข 2 cups Maida(all purpose flour)

โ€ข 1 teaspoon DesiGhee (Clarified butter)

โ€ข 1/2 cup sugar.

โ€ข 1 tablespoon powdered green cardamom.

โ€ข 2 tablespoon mix of finely chopped almonds, cashew, pistachios, coconut powder.

โ€ข Refined Oil to fry.

How to make Dough

In a bowl take purpose flour (maida) as per quantity mentioned above, Add refined oil and pinch of salt.

First mix with a roughly Hand. Then rub and mix the refined oil with the flours, with your fingertips to form a bread crumb like texture, Rub as much as you can, so that gujiya will become crispy from outside and soft from inside.

Add little water in parts and begin to knead. The amount of water needed will depend on the quality and texture of flour.

Knead the dough until it is firm and tight. Set aside for 10-15 minutes, Cover with wet cloth so that it's doesn't dry.


While your dough is resting, let make it's filling

Stuffing

To make the stuffing, take A pan, add one spoon of clarified Oil, in low flame add khoya, crumbled it, and roast dry fruits.

Keep mixing it, untill it becomes thickens and become as a single mass.

Once it get cool, then add sugar powder (make sure no lumps are there) and cardamom powder.

Make Gujiya

Knead the dough again to smoothen it well, take medium portion of your dough.

spread into a flat circle with the help of rolling pin like we do for roti. Not too thin, not too thick,After that, cut out into small palm size circle with the help of bowl or cookie cutter, so that you have all gujiya of same size.

Then, take spoon of your khoya filling and place it in the middle. After that, smear one side's edge with water which help it to stick.

then fold and join both the sides. Press well to ensure it is sealed well without any gap, it is one of most difficult task to do, do it carefully so that your gujiya don't get open while frying.

Making so many Gujiyas was not a task for me alone, I and my sister did it together. I will not take all the credit for myself, half of credit goes to my sister.

Looks beautiful and perfect. With the help of my sister finished it all, Keep covered to prevent drying.

All the gujiya are ready to fry.


Time To Fry

Heat the Oil in medium flame.
It should not too heat, Otherwise, the gujiya outer portion will brown faster and you will not get crispy results.

Slid some of your gujiya into the kadhai, cooked it into medium to low flame to get it golden in colour, once it get golden, drain the oil.

Repeat with all gujiya...


Now, your gujiya is ready to serve...

On the day of holi, we first apply colors to whoever comes in my home, Gujiya makes the mouth sweet, then we hug them, wish them Happy Holi.

It looks really delicious. This is the same as food in Indonesia. We make it in the same shape, called pastel, with vegetable fillings such as carrots, potatoes and chicken, mayonnaise with slices of boiled egg and smoked beef, and with the same shape, we call it panada with fish filling. next time I will try making a recipe like the one you shared.
