[ENG/ESP] Receta saludable panquecas de batata 🍠/Healthy sweet potato pancake recipe 🍠

Desde hace ya algĂșn tiempo tenia mucha ganas de compartirles esta receta , pero se ve habĂ­a complicado un poco pues no habĂ­a encontrado en la zona cerca a mi casa el ingrediente protagonista de la receta de hoy la batata, tambiĂ©n conocida como boniato o papa dulce. Y es que justamente esa caracterĂ­stica dulzura la hace perfecta para una buenas panquecas sin azucara añadida.

For some time now I have been wanting to share this recipe with you, but it was a bit complicated because I had not found in the area near my house the main ingredient of today's recipe, the sweet potato, also known as sweet potato or sweet potato. And it is precisely that characteristic sweetness that makes it perfect for a good pancake without added sugar.

Los ingredientes que necesitamos son los siguientes: 1 huevo, 1 taza de harina de avena, aproximadamente 1/2 taza de puré de batata, y un chorrito de agua, si gustan también pueden agregar canela o vainilla.

The ingredients we need are the following: 1 egg, 1 cup of oat flour, approximately 1/2 cup of mashed sweet potato, and a splash of water, if you like you can also add cinnamon or vanilla.

Lo primero es hacer el puré de batata consiste en cortar la batata en cubos y cocinarla, puede ser en un olla o en el horno , la ventaja del horno es que conserva mucho mas el sabor natural.

The first thing to do is to make the sweet potato puree, it consists of cutting the sweet potato in cubes and cooking it, it can be in a pot or in the oven, the advantage of the oven is that it preserves much more the natural flavor.

Ya con el puré listo agregamos el huevo y mezclamos bien , agregamos la harina de avena y de ser necesario un chorrito de agua. Por ultimo doramos por ambos lados en el sarten.

Once the puree is ready, add the egg and mix well, add the oat flour and if necessary a splash of water. Finally we brown on both sides in the frying pan.

Y ahora solo queda servir agregarle toppings en mi caso chocolate bitter sin azĂșcar y manĂ­, y a disfrutar!.

And now all that's left to serve is to add toppings, in my case bitter chocolate without sugar and peanuts, and enjoy!
