DELICIOUS YAM AND EGG SAUCE FOR SUNDAY LUNCH.

Beautiful afternoon to you all. Its a lovely Sunday here and I got back from church few hours ago. Today I will be sharing with us how I prepare a quick lunch of yam and egg sauce.
It's been very busy days for me for the past few days and during those times I had to reduce my food intake because I have a very sensitive stomach. That means when I eat much, I have the tendency of having a stomach upset which I don't want. Yesterday I only ate two times and I've been in church since morning. By the time I got back home I was so tired and so hungry. So I thought what could I cook that will be fulfilling yet very fast to prepare? Then I decided to go for yam and egg sauce. Luckily, I had some eggs available at home and ofcus the yams too.
With so much hunger, I dashed into the kitchen to start preparing the food cus my younger brother had eaten and the other one ate the jollof rice I brought from church (one of our choir members did wedding few days ago so she cooked for the choir). Since he loved the rice as you can see below, I let him have it.
In order to prepare the food, these are needed:
- Yam
- Eggs
- Tomatoes
- Pepper
- Onions
- Vegetable oil
- Maggi(Optional)
- Salt
PROCESS
Preparation of the egg Sauce.
- The first thing I did was to blend rinse the tomatoes, pepper and onions then I blend it into a soft paste.
- Next, I broke the eggs into a plate, put the frying pan on fire and add some vegetable oil to it.
- Once the Vegetable oil becomes hot a bit, I poured the pepper paste inside.
- After that, I added 2 cubes of Maggi, some salt, some curry and Thyme to the frying pepper paste.
- Then I allowed it to fry for few minutes. Next, I poured the egg into the fried sauce.
- Finally, I stirred it until the egg sauce fried very well.
Preparation of the yam.
- The first thing I did was to bring the yam out, put water inside a bowl and add some salt to it. The work of the salt is to wash out the starch on the yam.
- Next I sliced the yam into pieces as seen below, then I peel it's outer shell.
- Then I rinsed the yam inside the salty water, transfer it into a pot, add little water to it and little salt to taste.
- After that, I covered it and let it cook on medium heat.
- After some minutes, I used my Fork to confirm its soft enough and then I got to dish my food and my mum's.
