Refreshing Spinach, Fruit & Pasta Salad For Your Summer Enjoyment

Summer time is just around the corner and with the freshest vegetables and fruits becoming more available and at their ripest, now is the time to start enjoying some of those foods in a salad. Salads can be so refreshing... delicious, healthy and a great way to experiment with flavors.

Mr Golden D had seen this salad somewhere online one day of his endless scrolling online during the recent "shelter in place" executive order. I looked at the recipe... tweaked it a little for us and viola... a refreshing spinach and pasta salad with fruit.

RECIPE

Salad

  • 8-oz cooked Penne pasta
  • 2-cups fresh spinach
  • 1-cup sliced fresh strawberries
  • 1-cup pineapple chunks
  • 1/4-cup dried cranberries
  • 1/2-cup whole cashews

Salad Dressing

  • 1/2-cup olive oil
  • 1/3-cup ACV (Apple cider vinegar)
  • 1/4-cup plain/Greek yogurt
  • 1-tbls spicy mustard
  • 3-tbls honey
  • 1/3-cup orange juice
  • 2-tbls poppy seeds
  • pinch of salt and pepper



Mix salad ingredients together. Then whisk together the salad dressing ingredients and toss on salad. Allow to refrigerate for a minimum of four hours before eating.

WARNING- this recipe makes a HUGE bowl so you may want to consider cutting it in half depending on how many reside with you.

This salad dressing is SO GOOD that we have added it to our rotation of dressings to eat when we have salad for lunch or as a side dish with dinner.

I have to admit,,, this was the first time I have ever had fruit in my salad like this and it really was good.
