Kansas Style Pickled Eggs

I've had so much positive feedback from this recipe that I decided to vlog it! This is one of my favorite pickling recipes for eggs. Pickling eggs not only creates a tasty healthy snack but it also is a great way to preserve your eggs!

Here on the homestead I often have an over abundance of eggs to use and I hate wasting food. This is a great way for me to store these eggs for later. Did you know that chickens in their natural conditions and settings often stop laying eggs once the cooler weather sets in. This means if I want eggs later in the year I need to figure out a long term storage solution.

The plan is to become 100% self-sufficient and this brings me one step closer to that.

My dad told me about a time he visited his family homestead. My great grandma an immigrant from Eastern Europe. Even though she was new to the land thousands of miles from family and friends she brought with her life skills to live a self-sufficient life. Shelves of canned and mason jars lining the walls and a root cellar for food preservation.

I can just picture those shelves and assume preserved eggs were among the many food storages on the wall. I have a photo of her and my great-grandfather standing outside the homestead. She’s wearing an apron over her working dress. I often think about how used that hand-sewn apron to shield herself from food splatter, gathering eggs and doing her daily duties. She was incredibly strong and hard working. A centerpiece of the household.I wish I could go back and meet her. I feel as if sharing these stories about her brings her to life as she is now a great inspiration and driving force in me!

Oh BOY I have learned a bit about fermentation with @sequentialvibe. Not only does the taste amplify and improve, it helps preserve for future days! Essential on a homestead.
