Spicy Pickled Eggs

Everyone loved my last pickled egg recipe for my Kansas Award Winning Pickled Eggs so I decided to create a new one loaded with fresh ingredients and packed with flavor.

Step 1: Hard boil your eggs

For this recipe I used 18 eggs but you can hard boil as many as you like. A Gubba Tip give your eggs a hot start to make them easier to peel. This is the most tedious step of pickling eggs!

Step 2: Prepare your Brine

You will need the following
3 cups of white vinegar
1 1/2 cups water
1 tablespoon sugar
2 tablespoons sea salt
2 tablespoons pickling spice (I prefer spicy pickling spice)
2 jalapenos sliced
4 or 5 minced garlic cloves
6 to 8 sprigs of fresh dill
4 bay leaves
Half white onion sliced

In a sauce pan combine vinegar, water, sugar and salt. Heat on medium high while stirring until salt and sugar fully dissolve. Remove from heat and allow to cool.

Step 3: Combine eggs with your brine and ingredients

I like using mason jars myself but and glass container will do as long as it can be sealed. Add your garlic, jalapenos, onion, dill, pickling spice and bay leafs. Add your eggs and pour in your brine filling the jar as close to the top as possible. Seal the lid and give give it about 24-48 hours before eating one. The longer they sit the better they taste.

This should be good for 1-2 weeks but always check your eggs before eating them. Do no consume the bay leaves.
