No Bake Peanut Butter Cookies

One thing you'll notice about all of my recipes is I like keeping it simple while still packing tons of flavor. Cooking and creating your own food is so healthy for you compared to all the process junk in the world today.

You'll be enjoying these no bake peanut butter cookies in minutes! While traditional cookies take nearly a hour to make these will be ready in under 10 minutes!

Gubba Cooking Tips:

  1. Use milk chocolate instead of dark chocolate for a sweeter taste. You could even use white chocolate.
  2. Sprinkling nuts on top is optional but I feel it blends everything together perfectly with more depth to the texture and taste of the cookie.
  3. These cookies are also Vegan friendly so all can enjoy!

Prep Time: 5 minutes
Cooking Time: 5 minutes
Ready In: 10 minutes
Level: Beginner

Ingredients

  • 1/4 cup of maple syrup
  • 3 tablespoons vegan butter (or any butter if you're not going vegan)
  • 3 tablespoons of cocoa powder
  • 1 1/2 cups old-fashioned oats
  • 1/3 cup peanut butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/2 vegan dark chocolate morsels (or chocolate morsels of your choice if not vegan)
  • 1/4 cup chopped peanuts

Instructions

  • Line a baking sheet with parchment paper and set to the side
  • Add oats, peanut butter, vanilla, sea salt and chocolate morsels to bowl and set aside
  • Combine maple syrup, vegan butter and cocoa powder in a sauce pan and bring to a boil over medium-low-heat while stirring constantly.
  • Once lightly boiling continue to boil for another minute and remove from heat. Stir in ingredients in the set aside bowl.
  • Using 1/4th cup scoop batter onto baking sheet and shape cookies however you like. Sprinkle with chopped peanuts and place in fridge for 30-45 minutes (or snack on one real quick before you do lol)
