Good morning, dear Hive friends! How are you all doing today? I am excited to share with you a recipe for preparing deliciously crispy treats using the flowers of the Kathurumurunga plant. Known as Kathurumurunga (Hummingbird Tree - WHITE flowers) in Sri Lanka, both the leaves and flowers of this plant are not only edible but also highly nutritious. To start, ensure you select fresh Kathurumurunga flowers free from insects. Now, let's explore the steps to create this delightful dish.

Required Ingredients...

🍀 kathurumurunga flowers 10 or 15.
🍀 1 egg.
🍀 Salt to taste.
🍀 1 tablespoon of corn flour.
🍀 2 1/2 tablespoon of wheat flour.
🍀 1/2 teaspoon of pepper.
🍀 1/2 teaspoon of crushed chili powder.
🍀 pure coconut oil 200 ml.

Method of making....

First, separate the kathurmurunga flower petals. After that wash it well.

Next, take a bowl and combine eggs, chili powder, pepper powder, and a pinch of salt. Simultaneously, add wheat flour and corn flour, then mix thoroughly.

Subsequently, gently incorporate Kathurumurunga flowers into the prepared egg mixture, ensuring not to crush the flowers. Mix thoroughly.

Next, take a cooking pot, add oil, and heat it over a low flame. Then, carefully place the egg-coated Kathurumurunga flowers into the pot and fry them until they turn golden brown.

After frying, place the Kathurumurunga flowers on oil-absorbing paper for a while to reduce excess oiliness. I used Kathurumurunga leaves for decoration.
