Required Ingredients...

Eggplants 100g.
About 3 potatoes.
10 small red onion .
Curry leaves.
3 or 4 green chilli pods.
Crushed ginger and garlic.
1 table spoon of sugar.
1 tablespoon of coconut vinegar.
1 1/2 teaspoon of mustard powder
300ml pure coconut oil.
1 teaspoon of pepper powder.
1/2 teaspoon of turmeric powder.
1 teaspoons of chili powder.
Salt to taste.
A few sticks of cinnamon.

Method of making.

First, wash the eggplant and potatoes well, cut them into desired shapes and keep them separately.

Then take a cooking pot and put it on the stove and let it heat up on a low flame. Add pure coconut oil and fry the eggplants and potatoes until golden.

Then add small red onions and green chilies to the hot oil and remove from the heat in less than a minute.

Then, take a cooking pot and heat it over a low flame, using about a tablespoon of pure coconut oil. Fry the crushed garlic and ginger paste in it, and add cinnamon and curry leaves.

Then, add chili powder, pepper powder, salt, and turmeric powder to it. Mix well and add sugar, mustard powder, and vinegar. Mix thoroughly to combine the flavors.

Then, add the fried potatoes, onions, green chilies, and eggplants to the mixture. Mix well and let it cook for about two minutes. Afterward, remove it from the stove.
