Moringa curry is not only a culinary delight but also offers numerous health benefits. Packed with nutrients and bursting with flavor, this curry is a favorite among many Sri Lankans. Moringa is rich in essential vitamins such as Vitamin C, Vitamin A, Vitamin B, and Vitamin K. Additionally, it serves as a valuable source of minerals like calcium, iron, magnesium, and potassium, all crucial for maintaining balance in the body. This vegetable, known as drumstick, holds a special place in our culinary traditions. Moreover, its leaves boast remarkable health benefits. Not only does moringa help alleviate gut inflammation and reduce the risk of chronic diseases like heart disease, cancer, and diabetes, but it also promotes digestive health. Let's now explore how to prepare this curry.

Required Ingredients...

🍀 Drumstick 200g.
🍀 A chopped tomato.
🍀 Curry leaves.
🍀 Some finely chopped garlic.
🍀 A few cinnamon sticks.
🍀 A finely chopped onion.
🍀 About 2 chopped green chilli pods.
🍀 1 1/2 cup of coconut milk.
🍀 1/3 teaspoon of Fenugreek seeds.
🍀 Salt to taste.
🍀 1/2 teaspoon of curry powder.
🍀 1/2 teaspoon of Mustard powder.
🍀 1/2 turmeric powder.
🍀 1/4 teaspoon of Cumin seed.
🍀 1 teaspoons of chili powder.
🍀 1 cup of water.
🍀 1 tablespoon of coconut oil.

Method of making.

First, remove the skin from the top of the drumstick, cut it into small pieces, wash and clean it.

Next, add curry powder and mustard powder to the coconut milk kept separately and mix well.

Then take a bowl and add the chopped drumstick to it, add salt and turmeric powder to it, add about a cup of water to it and let it boil for about 10 minutes.

Once it cooking, remove it from the pot.

Then use about a tablespoon of coconut oil in the same pot and let it heat up. After the oil is heated cumin seed, fenugreek seeds, garlic. Add onions and curry leaves and fry for about a minute.

Then add chilli powder, green chillies, tomatoes and boiled drumstick to it and add coconut milk and mix well. Cook it for about 5 minutes. Then remove from heat.
