Qurator's: Hive Top Chef! | The Cheap Dinner Win | Fresh Tuna and Vegetable Salad

Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest Qurator's: Hive Top Chef! | The Cheap Dinner Win. These past few days have been a little tough for me—I had to undergo an outpatient surgery and was on bed rest for 5 days. I haven’t fully recovered yet, and I’m on a bland diet as part of my recovery. I’ve put together a recipe for dinner that’s very light, simple, requires just a few steps and ingredients, and above all, is very inexpensive—perfect for this contest.

All I had to do was mix some tuna with a few vegetables—that was it. Dinner was very nutritious, as well as delicious. I bought some avocados in a tray—they were ready to eat—and I ate from them three times; they were 295 grams for $0.44. I added red bell pepper and tomato to this salad—I just used half of each. I had spent $1.17 on everything, so for dinner, the cost was half of what I spent on those vegetables: $0.59.

The can of tuna costs about $1.50, tuna in water; I used the whole thing. I only used 15 grams of avocado, so that would cost $0.22. In total, dinner cost $2.31.

Ingredients


- 1 can of tuna containing 115 grams
- 59 grams of tomato
- 32 grams of red bell pepper
- 15 grams of avocado, diced

Preparation


1.- Wash the tomato and bell pepper, remove the seeds, and cut everything into small cubes.

2.- In a bowl, add the tuna, flake it a little with a teaspoon, and then add the chopped vegetables (the tomato and the bell pepper). Mix well.

3.- Finally, add the avocado, cut into pieces.

Here's how this delicious salad turned out—a light, nutritious, and very inexpensive dinner.
