Mint Leaves Soup with Egg Drop / Comfort Food

"Another new-found comfort food recently which I wondered why I found it late."

Mint Leaves Soup

My aunt believes herbs always have their healing properties to our bodies and she taught me to cook this once or twice a week. She even bought for me one pack of beautiful fresh mint leaves. She taught me two ways of cooking it, one was to cook mint leaves omelette, another was to cook mint leaves soup with egg drop. I chose the soup one for this round.

I also added pumpkin into it since I have somemore pumpkin in the fridge.

Ingredients

  • 1 pack of fresh mint leaves
  • Half pumpkin (cut into cubes)
  • 4 cloves of garlic
  • 1 small rose onion
  • 2 eggs

Let's go through the steps

  1. In a pot, heat up oil to stir fry some onions and garlic (you may add in ginger if you have, I didn't add because I didn't have it) until fragrant.

  2. After this, add in the pumpkin cubes and tossed them around awhile to brown the sides.

  3. Next, add in about two bowls of water and let it boil. If you have chicken stock, the soup will be more flavourful, but I used 1/2 chicken cube this round. Let it boil.

  4. After boiling for about 15-20 minutes or when the pumpkins are soft enough, add in the mint leaves, followed by the eggs and stir till the eggs are cooked. You may seasoned with some salt and pepper according to your taste.

  5. And the soup is ready!!!

My husband and I ate it just like that, or you may eat it with a bowl of rice. Indeed, a bowl of mint leaves soup leaves my body feeling refreshed and comforted. We loved the sweetness from the pumpkin as well, it was a great combo with the minty taste. This bowl of soup has its properties to strengthen lungs and immune system.

Have a try if you have mint leaves around. According to my aunt, it is easy to plant it just by using the stems. I shall buy pot and soil to have this plant growing at home soon.

From my imagination, I wouldn't like it, but once I tried, I love it. You may try too if you feel adventurous.
