Maravilloso y bendecido día, me alegra compartir una vez más con ustedes, en esta ocasión les muestro como preparar unas arepas de arroz, zanahoria, calabacín y chía ideal para desayunar o cenar y la pueden acompañar con el relleno de su preferencia yo las acompañe con un guiso de acelgas y papas, estas arepas contiene fibra, vitaminas y minerales aquí les dejo el paso a paso de esta sencilla receta.

Wonderful and blessed day, I am happy to share once again with you, this time I show you how to prepare rice arepas, carrots, zucchini and chia ideal for breakfast or dinner and can be accompanied with the filling of your choice I accompany them with a stew of chard and potatoes, these arepas contains fiber, vitamins and minerals here I leave the step by step of this simple recipe.

Para las arepas:

  • 2 tazas de arroz cocido
  • 1/2 taza de zanahoria rallada
  • 1/2 taza de calabacín rallado
  • 1 cucharadita de chía
  • 1/4 taza de harina de maíz

Para el relleno:

  • 2 papas
  • 5 hojas de acelgas
  • 1 tomate
  • 1cebolla
  • 2 dientes de ajo
  • 1 ramita de cilantro
  • Sal y pimienta al gusto
  • Cúrcuma
  • Aceite de oliva

For the arepas:

  • 2 cups cooked rice
  • 1/2 cup grated carrots
  • 1/2 cup grated zucchini
  • 1 teaspoon chia
  • 1/4 cup corn flour

For the filling:

  • 2 potatoes
  • 5 chard leaves
  • 1 tomato
  • 1 onion
  • 2 cloves of garlic
  • 1 sprig of cilantro
  • Salt and pepper to taste
  • Turmeric
  • Olive oil

Para preparar estas arepas lo primero que hago es colocar en un bol el arroz cocido con ayuda de un procesador o un pisa puré lo trituramos, luego agregamos la zanahoria, el calabacín, la chía mezclamos le agregamos harina y vamos amasando con las manos húmedas hasta formar una masa homogénea dejamos reposar por unos minutos.

To prepare these arepas, the first thing I do is to place the cooked rice in a bowl with the help of a food processor or a masher, then add the carrot, zucchini, chia, mix, add flour and knead with wet hands until a homogeneous dough is formed, let it rest for a few minutes.



Vamos tomando porciones de masa formamos bolitas y le damos forma redonda a nuestras arepas en un budare o en una plancha colocamos las arepas y cocinamos hasta dorar por ambos lados ya listas retiramos del fuego.

We take portions of dough and form small balls and give round shape to our arepas in a pan or griddle we place the arepas and cook until golden brown on both sides and ready to remove from the fire.



Preparamos un guiso de acelgas con papas picamos y troceamos las acelgas y las papas y cortamos pequeñito el cilantro; cocinamos al vapor primero las papas y los tallos de la acelga por 5 minutos aproximadamente, luego colocamos las hojas de las acelgas y cocinamos por 3 minutos y retiramos del fuego, picamos con la ayuda de un procesador de alimentos los aliños (cebolla, ajíes, tomate, ajo).

We prepare a chard stew with potatoes, chop the chard and potatoes and cut the cilantro into small pieces; we steam cook the potatoes and the chard stems for approximately 5 minutes, then add the chard leaves and cook for 3 minutes and remove from heat, chop the seasonings (onion, peppers, tomato, garlic) with the help of a food processor.



En una olla o paila colocamos un chorrito de aceite de oliva ponemos a sofreír el aliño aproximadamente por 3 minutos le agregamos las papas y los tallos de las acelgas saltemos por unos minutos añadimos la sal, pimienta y cúrcuma salteamos y por último le añadimos el cilantro mezclamos cocinamos por dos minutos y retiramos del fuego.

In a pot or pan put a drizzle of olive oil and sauté the dressing for approximately 3 minutes, add the potatoes and the chard stems, sauté for a few minutes, add the salt, pepper and turmeric, sauté and finally add the cilantro, mix, cook for two minutes and remove from the heat.



Ya listas las arepas las servimos calientes y acompañadas con el relleno de su preferencia como les dije anteriormente yo las serví con guiso de acelgas y papas y tajadas.

Once the arepas are ready, serve them hot and accompanied with the filling of your preference as I said before, I served them with chard stew and potatoes and slices.
