Hello friends of Hive, I hope you are well, today I attended an event of parrilleros, in which I had the opportunity to take pictures, while providing support to my friend @nayshot in the cooking log of Franklin Duarte, a lover of cooking that seeks to promote the typical dishes of the region in a different way.

Hola amigos de Hive, espero se encuentren bien, el día de hoy asistí a un evento de parilleros, en el que tuve la oportunidad de hacer fotografía, mientras brindaba apoyo a mi amiga @nayshot en el registro de cocina de Franklin Duarte, un amante de la cocina que busca promover los platos típicos de la región de una forma distinta.

In this meeting of grillers, which was attended by great cooks of the region, the cooking theme was Visceras, that is to say, all the preparations were based on liver, kidneys, heart, or other parts of the beef. Duarte decided to prepare Chanfaina, which is a meal made with the aforementioned organs, different vegetables and the cook's "secret" ingredients.

En este encuentro de parrilleros al que asistieron grandes cocineros de la región, la temática de cocina fue Visceras, es decir todas las preparaciones eran a base de hígado, riñones, corazón, u otras partes de la res. Duarte deicidio preparar la Chanfaina, que es una comida que se realiza con los órganos anteriormente mencionados, distintas verduras y los ingredientes “secretos” del cocinero.

The afternoon was full of smoke with the smell of firewood and my friend @nayshot was recording on video and photographically the different steps for the preparation, meanwhile I was assisting her with the bouncer and took the opportunity to take my pictures, it was a process of several hours.

La tarde estuvo llena de humo con olor a leña y mi amiga @nayshot estuvo registrando en video y fotográficamente los distintos pasos para la preparación, mientras tanto yo le asistía con el rebotador y aprovechaba para hacer mis fotografías, fue un proceso de varias horas.

Finally when it was ready, different people came to taste the Chanfaina, including other cooks who acted as tasters, because their opinion was of great relevance to Duarte, I did not dare to taste it because the idea of eating something based on these ingredients generated a little repulsion in me, But I decided to try it, and I found it exquisite, it had an intense meat flavor, slightly spicy and very well seasoned, I accompanied it with corn flour arepas and my perspective on this recipe changed, although I am sure that not everywhere they prepare it like Duarte's.

Finalmente cuando estuvo listo, , distintas personas se acercaron para probar la Chanfaina, incluyendo otros cocineros que hacían las veces de catadores, pues su opinión era de gran relevancia para Duarte, yo no me animaba a degustar pues la idea de comer algo a base de estos ingredientes me generaba un poco de repulsión, pero decidí probarlo, y me pareció exquisito, tenía un sabor a carne intenso, ligeramente picante y muy bien condimentado, la acompañé con arepas de harina de maíz y mi perspectiva sobre esta receta cambió, aunque estoy seguro que no en cualquier partes la preparan como la de Duarte.
