Have a healthy treat with Veggie Fried Rice..

Today I want to share with you my way of making Fried Rice. Being a vegetarian and a mum, I prefer to put lots of veggies in whatever I cook so that my kids can get goodness of veggies and the good taste both at the same time.

So.. Lets start with the recipe..

Ingredients

Rice : 300 GMs
Cabbage : 1 Cup
Capsicum : 1 Cup
Carrot : 1 Cup
French Beans : 1 Cup
Spring Onions : 1.5 Cups
Ginger : 1 Cube
Garlic : 10-12 Cloves
Green Chili : 5-6 (As require)
Soy Sauce : 2 Table Spoon
Salt : As per taste
Oil for cooking : 3 Table Spoon

First of all, take rice in a bowl and wash it properly. Cook the rice by putting extra water. Add little oil and salt in the water. When the rice is 90% cooked, switch of the flame and strain extra water. Wash the cooked rice with cold water so that it doesn't become sticky and keep it in the fridge for some time.

Cut all the vegetables, ginger, garlic and chillies into small pieces on a chopping board or with the help of chopper. I cut all the vegetables on chopping board except carrots, ginger and garlic. These I chopped in chopper to get the smaller pieces.

Now heat a pan, put 2 tablespoons of oil. Once oil is hot, add ginger, garlic and green chillies and saute for sometime.

Now add all the cut vegetables into the pan one by one and saute them properly. I first added beans then capsicum, then spring onions then carrot and lastly cabbage. Keep some spring onions aside to use it later and for garnishing.

Saute the veggies on hight flame for 1-2 minutes. Add soy sauce in the sauted vegetable and mix well.

Add rice in the vegetables and mix it properly.

Now add salt as per the taste. Just keep in mind that we already added little salt which boiling the rice.

Lastly add some spring onions which we kept aside.

Our veggie fried rice is ready now. Garnish the fried rice with some spring onions and serve hot.
