Fajitas de carne con calabacín y berenjena [ESP-ENG]
¡Hola, comunidad de Hive Food! Hoy vengo con una de esas recetas que solucionan el almuerzo sin necesidad de pasar horas en la cocina. Tenía ganas de preparar algo rico, completo y con bastante sabor, así que terminé combinando algunos ingredientes que tenía disponibles y el resultado me encantó. Preparé unas fajitas de carne acompañadas de calabacín, berenjena y papas, todo bañado en una salsa espesa de tomate que unió perfectamente cada ingrediente. Me gusta este tipo de comidas porque podemos jugar con las verduras que tengamos en casa y hacer que una preparación sencilla se convierta en un plato abundante y delicioso. Además, la carne queda muy sabrosa al cocinarse junto con la salsa y los vegetales. Es una receta práctica para esos días en los que queremos comer bien sin complicarnos demasiado.
Hello, Hive Food community! Today I’m bringing you one of those recipes that makes lunch easy without spending hours in the kitchen. I wanted something tasty, filling, and full of flavor, so I decided to combine a few ingredients I had at home, and I was really happy with the result. I made beef strips with zucchini, eggplant, and potatoes, all covered in a thick tomato sauce that brought every ingredient together beautifully. I really enjoy this kind of meal because you can easily use whatever vegetables you have available and turn a simple preparation into a hearty and delicious dish. The beef becomes especially flavorful as it cooks with the sauce and vegetables. It’s a practical recipe for those days when you want a satisfying homemade meal without making things too complicated.

400 gr de carne, 1 berenjena, 1 calabacín, 2 papas, 3 dientes de ajo, condimentos (orégano, comino, caldo de res y sal), 120 ml de pasta de tomate, aceite.
400 grams of meat, 1 eggplant, 1 zucchini, 2 potatoes, 3 cloves of garlic, seasonings (oregano, cumin, beef bouillon, and salt), 120 ml of tomato paste, oil.

Lavar y cortar los vegetales, reservar hasta utilizar, corten la carne en tiras, es tiempo de precalentar un sartén, añadan un poco de aceite.
Wash and chop the vegetables; set them aside until ready to use. Cut the meat into strips. Now it's time to preheat a skillet; add a little oil.
Incorporamos la carne y condimentamos a gusto, en mi caso añadí orégano, comino, caldo de res y sal al gusto, sofreír unos minutos hasta que la carne este dorada, en ese punto incorporen los vegetales, mezclen muy bien y dejen cocinar unos minutos para que todos los sabores se integren.
Add the meat and season to taste. In my case, I added oregano, cumin, beef broth, and salt to taste. Sauté for a few minutes until the meat is browned. At that point, add the vegetables, mix well, and let it cook for a few minutes so that all the flavors blend together.
Al pasar 10 minutos añadimos la pasta de tomate y 1/2 taza de agua, dejamos cocinar hasta que la papá esté suave, no olviden siempre verificar los sabores, cuando la papá esté suave y la salsa espesa estarán lista para comer las fajitas.
After 10 minutes, add the tomato paste and 1/2 cup of water, and let it cook until the potatoes are tender. Don't forget to taste it periodically. Once the potatoes are tender and the sauce has thickened, the fajitas will be ready to eat.
And that brings this simple but delicious lunch to an end—the kind of meal that leaves an empty plate and makes you want another serving. The combination of beef, vegetables, potatoes, and that thick tomato sauce turned out even tastier than I expected. I love when an everyday recipe becomes a meal that you genuinely enjoy.
