A Refreshing Cucumber Kimchi for Summer!

Happy weekend! It is already Summer in the Philippines! So hot! π₯΅
Today, I will share how I made homemade cucumber kimchi! A refreshing, zesty snack for Summer!π
I have seen a lot of this side dish in Kdramas and Korean mukbangs. It is hard not to salivate whenever I see it! π€€ I always take it whenever I eat at a Korean Barbeque restaurant. I would pair it with beef or pork then wrap it in lettuce~
It is so easy to make because it does not require cooking or baking, you just have to toss them in a bowl. Sounds very easy, right?
The main ingredients are , of course, cucumber, carrot, and garlic. I just used the ingredients that are available in the fridge, though some versions have additional ingredients such as green onions, and onions. Two cucumbers are good for a month for me.
I washed the cucumbers with salt first to get rid of the excess dirt. I then lightly scrapped the seeds out using a spoon. It is okay not to take them out, but for me, I prefer no seeds.
Time to chop! π Cut the way you like, it does not matter. Some prefer a coin shape or a diagonal cut. Generously sprinkle them with salt to make them cry. Leave it for 20 mins~
I still have time to chill while waiting for the cucumbers~ I scrolled through Tiktok for awhile while munching a cookie~
My timer went off and it is time to wash the cucumbers~ See that juice? I drank that. Hahaha just kidding! I washed the cucumbers with iced water to get rid of the salt. I pat them dry with a kitchen towel too.
I transferred the cucumber and carrot in a plastic tub so that I can mix them well.
Here are the other ingredients: π§πΆπ§
4 cloves of garlic
1 tsp of gochugaru (chili powder)
1 tsp of salt
2 tsp of brown sugar
2 tsp of sesame oil
1 tsp of fish sauce. You can skip this if it is a vegetarian version.
1 tsp of rice vinegar
dash of sesame seeds
Gochugaru is Korea's staple seasoning. Basically, it is used for side dishes, soup, stew, etc. I bought mine in a Korean shop online. About USD 2 for 200 grams.
I prefer the brand, Lee Kum Kee. USD 5 for 410 ML.
Mix them well all together. Always taste the food! Mine was a little salty so I added more sugar about 2 tsp more. I refrigerated it for an hour before eating it. π₯³
Served chilled! ππ₯
You can eat it with pork, rice, or just eat it as a snack~ It is dense with healthy ingredients so perfect when you are on a diet (like meπ€£). You can look here for more health benefits.

It is one of Koreans' popular Summer dishes. It is cold and watery, hehe. Maybe not for most Fils. π
Ang sarap π€€π€€π€€π€€. Favorite ko cucumber lagi ako kumakain every weekend, pero with vinegar, salt, sugar at pepper lang. Matry nga ito, mukhang ang sarap π

I saw that kind of kimchi served at K-BBQ but never really know how to make it. I thought it's a bit complicated because I tried cabbage and wasn't fan of the process but that one seems much simpler than what I tried π

I miss kimchi already! The last time I had it was when my daughter graduated from SHS. And then this reminds me of the Kdrama Reply 1988.
Was it not hard to find the korean ingredients? That was my concern everytime I want to make foreign food.

the mango pickle juice is new to me. I bet it is a lil bit sweeter. π
