The pleasure of eating a cachapa

Hace varios días atrás tenía ganas de comer cachapa, intente matar el antojo comprando esas que venden para hacer en casa, es decir las mezclas que se combinan con leche y huevo e hicimos unas en casa, pero la verdad, no mato para nada mi antojo, quería las verdaderas cachapas esas grandes y gruesas que venden en el Zamuro acá en Maturín en la vía nacional hacia Caripito.

Several days ago I felt like eating cachapa, I tried to kill my craving buying those that are sold to make at home, that is to say the mixtures that are combined with milk and egg and we made some at home, but the truth is that it did not kill my craving at all, I wanted the real cachapas, those big and thick ones that are sold in Zamuro here in Maturin on the national road to Caripito.

Por una cosa u otra no había podido comprarla pues iniciamos un proyecto constructivo para mudarnos y eso nos ha tenido colapsados, ir de una ferretería a otra, comprar bloques y todo lo que implica una construcción, eso ha adsorbido en gran cantidad mi tiempo y no solo el mío, el de @roadstories también, pues hacemos prácticamente todos juntos, él es mi mejor compañía.

Pero el sábado que paso logré ir a las cachaperas y comprar esta deliciosa comida. Lo mejor de todo fue la receptiva atención de las muchachas que allí trabajan, pues muy amablemente me explicaron el cómo hacer esas enormes cachapas y sobre todo cómo darle la vuelta y que no se rompan, pues le confieso que yo hago panquecas y el paso de darle vuelta es mi punto más delicado pues por lo general se deforman un poco, entonces imaginen darle vuelta a esa enorme cachapa que representa como cinco panquecas juntas.

But this past Saturday I managed to go to the cachaperas and buy this delicious food. The best of all was the receptive attention of the girls who work there, because they very kindly explained to me how to make those huge cachapas and above all how to turn them and not break them, because I confess that I make pancakes and the step of turning them is my most delicate point because they usually deform a little, so imagine turning that huge cachapa that represents about five pancakes together.

Para los que no saben, creo que muy poca gente y sobre todo acá en Venezuela, la cachapa es una mezcla de maíz amarillo tierno, como decimos acá, una especie de maíz muy fresco acompañada de azúcar un poco de sal y un toque de bicarbonato, este último es el secreto que les comparto pues este es el que hace que no se rompa la cachapa al momento de darle vuelta, Carolina que es el nombre de la muchacha, mejor conocida como la catira, me explicaba que una vez recibido el maíz el hacer la mezcla es un proceso laborioso pues se debe pelar y raspar todo el maíz, que es extraerlo de la mazorca, una vez hecho esto se debe moler en un molino y colocar el azúcar y la sal y por supuesto el bicarbonato, la mezcla debe quedar fluida para su mejor colocación en los budares muy calientes lo cual es otra cualidad de estas muchachas pues lo extienden con la mano y les juro que pareciera que tienen un nivel en ella pues todas tienen el mismo grosor.

Si hablamos un poco de historia pues debemos saber dónde se originó este delicioso plato, este es de origen nativo y se asocia a la región central de Venezuela. Los indígenas que habitaban en el actual estado Miranda cosechaban el maíz, este era tan valorado para ellos pues lo utilizaban en diferentes platos o simplemente lo consumían fresco es decir crudo, los granos de maíz se sembraban el día de San Isidro Labrador para rendir homenaje a los agricultores. Esta costumbre sigue viva en algunos pueblos agricultores venezolanos.

If we talk a little bit of history, we must know where this delicious dish originated, it is of native origin and is associated with the central region of Venezuela. The natives who lived in the current state of Miranda harvested corn, this was so valued for them because they used it in different dishes or simply consumed it fresh, i.e. raw, corn kernels were planted on the day of San Isidro Labrador to pay tribute to farmers. This custom is still alive in some Venezuelan farming villages.

Este plato se puede disfrutar de todas formar hasta solo, yo lo acompaño con mantequilla y queso de mano pero también se acompaña con cochino frito o chicarrón (piel de cerdo frita) definitivamente este es un plato típico que se puede comer en casi todos los estados de Venezuela y en algunos país de la Latinoamérica si no es un plato típico del país es producto de la migración de venezolanos los cuales ha llevado nuestras culturas gastronómicas para que otras personas disfruten de nuestra comida.

This dish can be enjoyed in any form, even alone, I accompany it with butter and hand cheese but it is also accompanied with fried pork or chicarrón (fried pork skin) definitely this is a typical dish that can be eaten in almost all states of Venezuela and in some Latin American countries if it is not a typical dish of the country is a product of the migration of Venezuelans which has brought our gastronomic cultures for other people to enjoy our food.

Para quien aún no haya probado este rico plato no se imagina la delicia que se está perdiendo, esa mezcla de sabores en la boca entre dulce y salado, esa textura del maíz simplemente una exquisitez aparte el maíz es rico en nutrientes como ácido fólico, proteínas y potasio así que no piense solo en los carbohidratos y el azúcar que probablemente nos engorden un poquito, cómelo y disfrútalo
