Vegetarian Meat Magic Stewed in Tomato Sauce

Good morning Hiveans! Today, I am cooking up a stewed meat magic recipe, which is a vegan meat substitute, and using the remaining veggies in the pantry for a nice meal to start the weekend.

For the veggies, I found some carrots, potatoes, string beans, and kangkong (Chinese Spinach or Water Spinach). All of these contain a healthy dose of vitamins and minerals, carbohydrates, protein, fiber, sugar, and antioxidants that can provide adequate nutrition for a good day's work.

I marinated the meat magic a few nights ago and left it in the refrigerator so I used those.

I also used some leftover rice from last night make fried rice and topped it off with boiled eggs, sliced cucumbers for an added boost of raw veggie power. You can do away with the boiled eggs if you want a purely #vegan meal.

INGREDIENTS

  • Meat Magic (dried vegan meat substitute)
  • Kangkong Leaves (2 cups)
  • String Beans (50 grams)
  • Potato (1 small)
  • Carrot (1 small)
  • Tomato Paste (1 pack, 150 g.)
  • Leftover Rice (3 cups)
  • Cucumber (35 grams)
  • Boiled Egg (1 piece)
  • Salt & Pepper (To taste)
  • Cayenne (To taste)
  • Mushroom Powder Seasoning (To taste)
  • Coconut Oil (6 tablespoons)
  • Water (2 cups)

PROCEDURE

  1. Wash and cut all the ingredients. Set aside.
  2. Heat 3 tablespoons of oil and fry the meat magic in low to medium fire.
  3. Turn the meat magic on the other side and add the medium diced potato.
  4. Add in the medium diced carrots and string beans cut into 2 cm., after a few minutes and gently stir fry.
  5. Put in the tomato sauce and the kangkong leaves and cover for five minutes.
  6. Pour 1 cup of water, stir and cover for another five minutes in low to medium fire. Add in more water if it evaporates too fast.
  7. Add a pinch of salt & pepper and cayenne powder for a little spice. Stir and cover to cook some more.
  8. Add in mushroom powder seasoning and adjust to your taste. You may add a little sugar and some more salt and pepper at this time.
  9. Put in a bowl and serve hot!

For the meat magic, I marinated it with soy sauce, salt, pepper, cayenne, sugar and Spanish paprika.

The stir fried vegetables and meat magic looked good enough to eat but I wanted it with tomato sauce. :)

The tomato sauce turned out to be a good idea as it brought together the ingredients into a complementary flavorful dish.

I tried out a new variety of rice I had not cooked before and it turned out good because of the dry texture and good flavor. Perfect for use in fried rice! :)
