My First Ladder ๐ช & Mattar Tofu For Srey-Yuu ๐
For the first time in my life I am the proud owner of an aluminum ladder, and thanks to Monkey-B for helping to transport it home.

ย ย ย We've needed a ladder for far too long, and in fact I've needed a ladder many times in life, but was always able to borrow one from a friend or neighbor. We can kind of do that here in our remote village, but there is so much drama here that I don't hang out with the neighbors enough to do things like borrow ladders and what not. We bought one online and picked it up from the bus station after grabbing Monkey-B from school. She decided it would be fun to sit in the middle of the ladder, but then fell asleep and bounced her head off the step.
A Spurt Of Motivation ๐งผ
ย ย ย When we got home Monkey-B showed strange signs of motivation, and immediately washed the dishes. This caused me to become immediately suspicious, I think her mom promised her some screen time in some kind of top secret blackmail deal.
Mattar Paneer Tofu ๐
ย ย ย As we move on in the post, a day has passed and Monkey-B and Sreypov are no longer here. They've gone to Phnom Penh for a wedding, and will likely be gone a total of three days, so it's just Srey-Yuu and I holding down the fort until their return. Of course we're eating delicious food while they're gone to teach them a lesson. As vegans we don't eat paneer, but tofu makes a suitable substitute in most situations.
ย ย ย Srey-Yuu had a headache when she returned from school, but despite her facial expression, she did enjoy the lunch I prepared for the two of us. I suspect it was a combination of too little sleep, too much stress, and too little water, but something curable with a spicy bowl of mattar tofu.
You Want A Bite? ๐ฅฃ
ย ย ย Green peas are a luxury food item for us, something hard to find and also must be kept frozen, not an easy thing to do with constant power outages and and an undersized fridge. When a meal involves green peas, it's a pretty big deal, so I was hoping this meal would increase Srey-Yuu's morale a bit, and of course provide some healing from all the spices too.
ย ย ย After lunch she showed me the teenage version of a smile, they reminded me her headache was still kicking. Well, luckily tomorrow is Saturday, so if she can get through a half day of school she'll have Sunday to rest and regenerate. She's been posting a lot more lately, and I'm encouraging to consider spending some of her money on a iPad upgrade.

Wow, I know this recipe similar to mattar paneer. I think tofu is alternative options to paneer. Enjoy my dear friend this delicious dish.
Yes, very similar, but because my family is vegan, we use tofu and coconut oil instead of paneer and ghee. Thanks for stopping by my friend.

Having a ladder is always a good thing; they're surprisingly usually in high demand. Also useful for if one needs to break into a spontaneous high stakes wrestling match!
Ya know I hadn't originally had any planned wrestling uses of the ladder, but now that you mention it....
Having a privilege to lead a life in midst of such green countryside region is particularly awesome. There is peace in enjoying self cooked dishes, the beauty to enjoy in natural seting.

I see Srey-Yuu wearing a rather thick hoodie in the pics. Is it somehow cold where you are or is she just being fashionable?
That hoodie has a funny story. It was bought by a friend of a friend visitor from the USA because our place was too cold for him at night. When he left he gifted it because he wanted to travel light and knew he wouldn't need it. Of course we're used to the weather here now, but sometimes days are cold even for us.
